One Pot Meal: Man-Pleasing BBQ Chicken Pasta Recipe

One pot meals has recently ramped up as one of my favorite ways to cook weeknight meal
- 4 slices bacon, diced
- 2 chicken breasts, boneless, skinless, cut into 1-inch chunks
- 2 cloves garlic, minced
- 1 onion, diced
- 2 cups chicken broth
- 1 (14.5-ounce) can diced tomatoes
- 1/2 cup milk
- 1/4 teaspoon crushed red pepper flakes, or more, to taste
- 3 cups rotini pasta
- Kosher salt and freshly ground black pepper, to taste
- 1/4 cup barbecue sauce, or more, to taste
- 1 cup cheddar cheese, shredded
Black Forest Frozen Yogurt with Chocolate & Cherries

- 3/4 pound (12 ounces or 350 grams) fresh sweet cherries or 1 1/2 cups frozen unsweetened Bing cherries, thawed

- 6 tablespoons unsalted butter, slightly softened
- 1 vanilla bean, seeds scraped
- 1/4 cup toasted pecans, chopped
- Salt and freshly ground black pepper
- 1 pound brussels sprouts, trimmed
- 3 tablespoons canola oil
- 3 tablespoons pomegranate molasses
- Seeds from 1 pomegranate
- Zest of 1 lime
- 1 tablespoon orange zest, finely grated
Chipotle Cashew Chicken

This is a recipe that I would never have tried to make by just reading it
- 1 tablespoon extra-virgin olive oil
- 1 medium onion, thinly sliced
- 2 pounds chicken meat: tenders, boneless, skinless breasts or boneless, skinless thighs, cut into 2-inch pieces
- 2 tablespoons grill seasoning blend (recommended: Montreal Steak Seasoning blend by McCormick)
- 2 to 3 tablespoons tamari dark soy sauce, eyeball it
- 4 cloves garlic, chopped
- 1 red bell pepper, seeded and thinly sliced
- 10 to 12 water chestnuts, whole
- 1 cup frozen green peas
- 3 tablespoons chipotle in adobo** (2 peppers and their sauce), available in cans on the international foods aisle or substitute 1 1/2 tablespoons ground chipotle powder
- 1 tablespoon ground cumin, a palm full
- 2 to 3 tablespoons honey, 2 healthy drizzles
- 1/4 to 1/3 cup real maple syrup, eyeball it
- 2 to 3 tablespoons chopped cilantro or parsley leaves, your preference
- 1 cup raw cashews
Crash Potatoes - Two ways

I'm a big fan of creamy mashed potatoes-- really, I love spuds boiled, deep fried, roasted and baked
- The recipe is so simple that you really don't need measurements. What you will need is:
- Baking Sheet
- A brush to apply the olive oil
- Potato Masher (you can use a fork, but the masher makes thing easier)
- Potatoes of your choice-- I like red bliss or Yukon Gold
- Olive oil
- Kosher salt (I never use table salt for roasting)
- Fresh ground black pepper
- Herb of your choice-- I've used fresh shopped rosemary or thyme. Dried herbs work, too
- Optional: heavy cream and parmesan cheese
- I've also seen versions using cheese and bacon

- 1 cup water
- 1/2 teaspoon ground ginger
- 1/4 teaspoon garlic powder
- 5 tablespoons brown sugar, packed
- 1 to 2 tablespoons honey
- 2 tablespoons cornstarch
- 1/4 cup cold water
Pavlova with Fresh Summer Berries & Raspberry Coulis Sauce

Pavlova (Pav) is a meringue cake that has a light and delicate crisp crust and a soft sweet marshmallow center
- MERINGUE CAKE:
- 4 large egg whites
- 1 cup superfine or castor sugar
- 1 teaspoon white vinegar
- 1/2 tablespoon cornstarch (corn flour)
- TOPPING:
- 1 cup heavy whipping cream
- 1 1/2 tablespoons granulated white sugar
- 1/2 teaspoon pure vanilla extract
- Fresh fruit - kiwi, strawberries, raspberries, blackberries, passion fruit, peaches, pineapple, or other fruit of your choice. I like to use fresh blueberries, raspberries and either blackberries or olallieberries
- RASPBERRY COULIS SAUCE:
- 2 (8 ounce) containers fresh or frozen raspberries
- 1 teaspoon lemon rind
- 1 tablespoons fresh lemon juice
- 1/2 cup sugar
- 1/2 cup water
- OPTIONAL:
- 1 tablespoon Chambord (Raspberry Liquor)

Thai-Style Chicken Soup

- GARNISH:
- 1 teaspoon vegetable oil
- 3 stalks lemongrass, tough outer leaves removed, bottom 5 inches halved lengthwise and sliced thin crosswise

- 3 tablespoons fish sauce, divided
- 4 cups low-sodium chicken broth
