- 3/4 cup flour
- 3/4 teaspoon baking powder
- 1 tablespoon Italian seasoning
- pinch of salt (my addition, optional)
- pinch of red pepper flakes (my addition, optional)
- 3/4 cup whole milk
- 1 egg, lightly beaten
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 cup cubed pepperoni
- 1/2 cup store-bought pizza sauce

- 3 cups mixed berries (raspberries, blueberries, blackberries, and strawberries; strawberries stemmed and halved lengthwise if small, quartered if large), room temperature (see note)
- 2 teaspoons granulated sugar
- pinch table salt
- Zabaglione Topping
- 3 large egg yolks
- 3 tablespoons granulated sugar
- 3 tablespoons dry white wine such as Sauvignon Blanc
- 2 teaspoons light brown sugar
- 3 tablespoons heavy cream , chilled
Asian Glazed Roast Pork Tenderloin

Pork tenderloin is my favorite "other white chicken"
- 6 tablespoons soy sauce
- 6 tablespoons light brown sugar
- 2 tablespoons peeled and minced fresh ginger (I used my microplane for this)
- 5 teaspoons Asian sesame oil
- 5 garlic cloves, finely minced
- 1/2 teaspoon crushed hot red pepper flakes
- 1 pork tenderloin, trimmed of excess fat and any thin silver skin
- 2 scallion (green onion), white and green parts, thinly sliced for garnish
Israeli Couscous with Apricots and Pomegranate

Bring a small pot of well-salted water to a boil over high heat
- Kosher salt
- 2 cups Israeli couscous
- Extra-virgin olive oil
- 3 cloves garlic, smashed
- Pinch crushed red pepper flakes
- 1/2 cup sliced almonds, toasted
- 1 cup chicken stock
- 1 cup pomegranate seeds
- 1/2 cup dried apricots, cut into 1/2-inch dice
- 4 scallions, white and green parts, cut thin on the bias
Krispy Coconut Oatmeal Cookies

A friend of mine turned me on to this recipe, that she adapted from the blog "Nums the Word"
- OPTIONAL:
- 1 cup (2 sticks) salted butter, softened
- 1 cup granulated sugar
- 1 cup light brown sugar
- 1 cup vegetable oil
- 1 large egg
- 2 teaspoons vanilla extract
- 1 teaspoon cream of tartar
- 1 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 3 1/2 cups all-purpose flour
- 1 cup Rice Krispies cereal
- 1 cup oats
- 1 cup sweetened flaked coconut
- You can add 1/2 cup of toasted chopped pecans or walnuts for added flavor
- You can add 1 cup of mini chocolate chips or even butterscotch chips for fun!
Broccoli Salad

This recipe for broccoli salad is very versatile
- Broccoli florets, about 4 cups
- 1 cup mayonnaise
- 2 tablespoons Japanese rice vinegar
- 1/4 cup sugar
- 3/4 cup red onion, diced
- 4 to 6 bacon strips, cooked crips and crumbled
- 1 cup dried cranberries
- 1 cup sliced almonds
Prosciutto Roasted Bass with Autumn Vegetables

- 2 cups peeled, seeded, and (1/2-inch) diced butternut squash
- 2 cups peeled and (1/2-inch) diced Yukon Gold potatoes (2 medium)

- 2 teaspoons sesame oil
- 1 teaspoon sugar
- 1/2 cup chicken broth
- 3 tablespoons oyster sauce
- 2 tablespoons soy sauce
- 1-1/2 tablespoon rice wine vinegar
- 1-1/2 tablespoon cornstarch
- 2 teaspoons sesame oil
- 1 teaspoon sugar
- In a small dish combine:
- 2 tablespoons slivered green onion
- 2 tablespoons minced ginger.
