- Coconut-chili-ginger sauce
- 1 tablespoon unsalted butter
- 2 shallots, minced
- 2 blades lemongrass, chopped
- 3 (1/2-inch) pieces fresh ginger, thinly sliced
- 1 cup sweet white wine
- 2 cups chicken broth
- 2 tablespoons Thai red curry paste
- 2 tablespoons Chinese black bean chili sauce
- 1 (8-ounce) can coconut milk
- 1/2 cup (1stick) unsalted butter, softened and cut into pieces
- Salt and freshly ground black pepper to taste
- Pistachio-crusted chicken
- 4 boneless chicken breasts
- 1 quart buttermilk
- 1 pound salted pistachios, shelled and toasted
- 1 cup grated Parmesan cheese
- 1/4 cup fresh thyme
- 1/3 cup chopped fresh rosemary
- 1/4 cup chopped fresh parsley
- 2 cups all-purpose flour
- Salt and freshly ground black pepper to taste

- 2 packets active dry yeast (or 4-1/2 teaspoons)
- 4 1/4 cup flour
- 2 tsp pumpkin pie spice plus
- 1/2 tsp cinnamon

- 1 tsp nutmeg
- 1/2 tsp allspice
- 1/2 tsp cardamom
- NOTE: I buy Baker's Cinnamon Filling from www.kingarthurflour.com because it makes the BEST cinnamon filling To make your own you will need:

- 1/2 cup brown sugar
- 1 tbsp cinnamon
- 4 tbsp butter, very soft
- For the icing:
- 4 oz cream cheese, softened
- 4 Tbsp. butter, softened
- 2 cups powdered sugar
- 2 Tbsp. Pure Maple Syrup, optional (not pancake syrup)
