Chinese Fakeout: Cashew Chicken

This is a very quick dinner to make, that captures the flavor of Chinese Cashew Chicken. From start to finish, I can have this ready for my family in 30 minutes

Ingredients

  • Ingredients:
  • 2 lbs boneless skinless chicken breasts (cut into 1” chunks)
  • 1 large green pepper (sliced)
  • 1 large onion (sliced)
  • 3 cloves garlic, minced
  • 3 cups snow peas (trimmed of string on the top edge)
  • 1 can sliced water chestnuts (optional)
  • vegetable oil
  • For the sauce:
  • 1 cup chicken broth
  • 2 tablespoons oyster sauce
  • 1 tablespoon sugar
  • 2 tablespoons soy sauce
  • 1 teaspoon pepper
  • 3 tsp corn starch
  • For Garnish:
  • 2 cups cashews
  • 1/3 cup green onions (chopped)

Step 1

Prepare the sauce:
In a bowl, whisk the chicken broth, oyster sauce, sugar, soy sauce and pepper. Add the corn starch and whisk until smooth; set aside.

Preheat oven to WARM (optional, but I like to keep the cooked food warm).

Stir fry the chicken in a wok (or deep skillet) with a little hot oil Medium-High Heat) until no longer pink (3-5 minutes). Remove into a large bowl and set aside

Heat a tiny bit of oil in the wok and stir fry green pepper and onions until softened, 3-5 minutes. Add the water chestnuts for 2-3 minutes, add the garlic and stir until fragrant (about 30 seconds). Remove from wok and add to the bowl of chicken.

Add a little more oil and stir-Fry the snow peas for 2-3 minutes, retaining bright green color and do not overcook! Add to the bowl of cooked chicken & vegetables and set aside.

Pour sauce into empty wok and cook over medium heat stirring until well blended and sauce thickens. Remove from heat.

Return the chicken and vegetables to the sauce filled wok and stir to combine all of the sauce; add the cashews.

Serve over steamed rice and garnish with green onions.

Variation: replace the chicken with raw deveined shrimp and garnish with sesame seeds, instead of cashews.
