ENCHILADAS IN RED TOMATO SAUCE

Place the tomatoes, garlic, onions, and chile on a medium baking dish, roasting pan or ovenproof skillet
- For the sauce:
- 1 poundripe tomatoes
- 1 garlic clove, skin on
- 1 1/4 ″-thick slicewhite onion (about 1 ounce)
- 1 jalapeño or serrano chile, or to taste
- 3/4 teaspoon kosher or sea salt, or to taste
- For the enchiladas:
- Oil for frying the tortillas, optional
- 12 corn tortillas
- 1/2 cup Mexican cream
- 1/2 cup queso fresco or cotija, crumbled
- 1/3 cup white onion,chopped
- Ripe Mexican avocado, halved, scooped and sliced

- 1 lb. ground beef
- 2 (16-oz.) cans refried beans
- 1 (8-oz.) pkg. Colby Jack cheese, shredded and divided
- 1 (7-oz) can fire-roasted green chiles, drained
- 1 (8-oz.) pkg. cream cheese, room temprature
- 1 cup sour cream (plus more for serving)
- 1 (1-oz.) pkg. taco seasoning
- Chips for serving
- Optional: Serve with extra sour cream, olives and salsa
- 4-quart or larger
Paella Salad

- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 3 tablespoons chili powder
- 1 tablespoons Hungarian sweet paprika
- t/2 teaspoon white pepper
- 1 or 2 whole jalapenos, seeded and
- halved
- 3 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon onion powder
Chicken Spaghetti Casserole

- 7 ounces thin spaghetti
- 1 tablespoon salted butter
- 2 cups sliced mushrooms
- 1 medium onion, chopped
- 1/2 cup chopped celery
- 1/2 cup chopped green bell peppers
- 2 10.75-ounce cans 98% fat free cream of mushroom soup
- 1 cup nonfat milk
- 8 ounces sharp cheddar cheese (can sub reduced fat)
- 2 cups chopped cooked chicken breast
- 1 teaspoon Tabasco sauce
- salt and pepper, to taste
JACK DANIELS BEEF JERKY

Combine the marinade ingredients in a bowl
- 2 pound flank steak
- ½ cup soy sauce
- ½ cup Jack Daniels bourbon
- ¼ cup brown sugar
- 1 tablespoon Liquid Smoke
- ½ cup water
- 4 cloves garlic
- 2 tablespoons fresh ground black pepper
- 1 teaspoon red pepper
- 1 teaspoon white pepper
- 1 teaspoon onion powder
Cheddar Bacon Chicken Tenders

- 1/2 cup Progresso™ plain panko crispy bread crumbs
- 1/2 cup finely shredded Cheddar cheese (2 oz)
- 1 package or jar (3 oz) cooked real bacon bits or pieces
- 1 package (14 oz) uncooked chicken tenders (not breaded)
