- FOR THE CRUST
- 4 tablespoons (1/2 stick) unsalted butter, melted and cooled, plus more for pan
- 2/3 cup shelled pistachios
- 1 cup (4 ounces) graham-cracker crumbs
- 1/4 cup sugar
- 1 tablespoons grated lime zest
- FOR THE FILLING
- 2 large egg yolks
- 1 can (14 ounces) sweetened condensed milk
- 1/2 cup fresh lime juice

Updated Chicken Chow Mein

- 1 pound fresh plain chicken sausages, cut into 1/2-inch pieces
- 4 garlic cloves, minced
- 2 tablespoons minced ginger
- 4 ounces snow peas, cut in half
- 2 fresh, hot long red chilies, seeded and thinly sliced
- 1/3 cup fresh orange juice
- 1/2 pound fresh or dried Chinese egg noodles, cooked
- 1 cup chicken stock mixed with 3 tablespoons of hoisin sauce and 2 teaspoons of cornstarch

- 1 POUND THINLY SLICED BONE-IN SMOKED PORK CHOPS
- 8 OUNCES SLAB BACON, CUT INTO 4 PIECES
- 4 FRESH BAY LEAVES
- 3 SPRIGS FRESH THYME
- 3 GARLIC CLOVES, THINLY SLICED
- 1 ½ POUND SMOKED PORK SAUSAGES, SUCH AS KIELBASA, CUT INTO 2 TO 3 INCH CHUNKS
- FRESHLY GROUND BLACK PEPPER
