No-Cook Tomato Sauce

Pulverize one tomato in a food processor
- 3-4 lbs fresh tomatoes
- 25 leaves of fresh basil
- 1/2 cup olive oil
- 4 cloves fresh garlic

- 3 large cinnamon sticks
- or
- 3 T cinnamon bark bits from an Indian grocery store)
- 3 T whole cloves
- 1/4 C green cardamom pods, shelled, husks discarded (about 2 tablespoons of seeds)
- 4 large black cardamom pods, shelled, husks discarded (about 1 tablespoon of seeds), optional
Indian Spinach Salad

Blend the vinegar, salad oil, chutney, sugar, salt, curry powder, and dry mustard in a food processor until smooth
- 1/4 cup white wine vinegar
- 1/4 cup salad oil
- 2 tablespoons chutney, chopped
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 1 1/2 teaspoon curry powder
- 1 teaspoon dry mustard
- 8 cups fresh spinach leaves
- 1 1/2 cups chopped apples
- 1/2 cup raisins
- 1/2 cup dry-roasted peanuts
- 2 stalks green onions, chopped
Madeira Truffle Sauce

- 2 tablespoons unsalted butter
- 1 tablespoon chopped shallots
- 1/2 cup dry Madeira or Sherry
- 1 cup demiglace (see note)
- 1/2 teaspoon potato starch, dissolved in 1 tablespoon water
- Salt and freshly ground black pepper to taste
- 1 large black truffle, shaved with a vegetable peeler or truffle slicer, or 1/4 cup truffle peelings, finely chopped
- 1 tablespoon Cognac
Cranberry Relish

- 1 Orange
- 3 Red apples
- 2-3 Green apples
- 2-3 Bags of fresh cranberries
- 1 1/2 c. sugar
- 1 20-oz. can crushed pineapple
- 1/2 c. chopped pecans (optional)
Summer Corn, Avocado & Black Bean Salad — Produce On Parade

Prep all the veggie ingredients and add them to a large serving bowl
- Dressing:
- 1 3/4 cup thawed frozen or fresh sweet corn
- 40 cherry tomatoes, halved
- 1 15 oz. can of black beans, rinsed and drained
- 2 avocados, diced
- 1 red onion, finely diced
- 1/4 cup cilantro, chopped (use the stems too!)
- 2 Tbsp. olive oil
- 1 lemon, juiced (or 2 limes)
- 1-2 tsp. cumin
- 1/2 tsp. kosher salt
- 1/2 tsp. ground black pepper
Christmas Nut Cake

There is almost no filler in this nut cake
- 2 pounds whole pitted dates
- 2 pounds whole walnut meats
- 1 pound Brazil nuts
- 8 oz. dried apricots, cut up
- 5 large eggs
- 1 c. flour
- 1 c. sugar
- 1 t. salt
- 1 t. baking powder
- 8 oz. maraschino cherries, drained
Baked Parmesan Garlic Mushrooms

1. Preheat oven to 350F. 2
- 4 cups raw, sliced mushrooms (I used baby bellas and white mushrooms, but any kind will work)
- 3 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dried basil
- 2 tablespoons Parmesan Cheese
Muellers Macaroni & Cheese

Cook pasta for 6 minutes and drain
- 2 tablespoons margerine or butter
- 1/4 cup sifted flour or Wondra
- 1 teaspoon salt
- 1/2 teaspoon dry mustard
- 1/4 teaspoon pepper
- 2 1/2 cups milk
- 2 cups grated cheddar cheese
- 1 3/4 cup dry macaroni
- 1/4 cup bread crumbs
Bacon-Water Chestnut Wraps

You might want to cut some of the chestnuts in half, and wrap each with bacon
- 2 cans whole water chestnuts
- 1 lb bacon, cut into thirds
- 1/2 c. ketchup
- 6 T brown sugar
- 2 T vinegar
- 2 T prepared mustard
