French Onion Soup

From a now-closed restaurant, "Herve' Restaurant & Wine Bar"
- 2 1/2 red onions
- 2 yellow onions
- 2 c. shallots
- 1/2 bunch scallions
- 3 T crushed garlic
- 3 T vegetable oil
- 1 gallon beef stock
- 1/8 bottle cream sherry
- 1 large pinch of oregano
- 1 1/4 oz Pommery mustard
- Cornstarch
Spaghetti Pie

Preheat oven to 350 degrees Cook spaghetti according to package instructions, drain Mix eggs, ricotta, & parmesa
- 1/2 lb spaghetti
- 2 large eggs
- 1/2 c mozzarella cheese
- 15 oz ricotta cheese
- 3/4 c grated Parmesan
- 1 c marinara sauce
Cream of Crab Soup Recipe | SAVEUR

Melt butter in a 4-qt. saucepan over medium heat
- 4 tbsp. unsalted butter
- 1 cup chopped yellow onion
- 1 ⁄3 cup flour
- 4 cups half & half
- 1 ⁄2 tbsp. Old Bay seasoning
- 1 lb. jumbo lump crabmeat
- Kosher salt and freshly ground black pepper, to taste
- Dry sherry (optional)
Oven-Roasted Chicken Cacciatora

Serves 6, and doubles easily
- 2 1/2 to 3 pounds bone-in, skin-on chicken thighs (8 thighs; organic if possible)
- 1/2 cup pitted Kalamata olives
- 4 thin slices Cacciatore or Genoa or hard salami, cut into 1-inch squares 1 large red bell pepper, cut into 1-inch pieces
- 1 large fresh tomato, or 3 drained canned ones, coarse chopped
- 1 medium to large red onion, coarse chopped
- Leaves from two 4-inch sprigs fresh rosemary
- 10 fresh sage leaves, torn
- 4 large garlic cloves, minced
- 1 teaspoon fennel seeds, lightly crushed
- 1/4 cup dry red wine
- 1/4 cup good-tasting extra-virgin olive oil
- Salt and fresh-ground black pepper
- Juice of 1 lemon

Orange Jellies

Slice the oranges with the poles at the sides
- Tools you will need:
- 3-4 large Temple oranges
- 2 large boxes of orange Jell-o
- Hot water
- Muffin tin
- Strainer
- 2 bowls
Cinnamon Roll Apple Pie

1. Preheat oven to 350°F/180°C and spray a pie dish with nonstick oil
- 5 Granny Smith apples
- 2 cans cinnamon rolls
- 1/2 cup sugar
- 1 teaspoon cinnamon
- 1 tablespoon cornstarch
Avocado Egg Salad

- 4 hard-boiled eggs
- 1 large avocado
- 2 T. yogurt
- 1 t. curry

Goat Cheese & Green Chile Quesadillas

Grill tortillas on both sides or cook in oil in a pan on each side until golden brown & set aside to cool
- 1 pkg small flour tortillas
- 2 T. vegetable oil
- 6 oz. Monterrey Jack Cheese, shredded
- 3 oz. mild soft goat cheese
- 1 can chopped green chilies, drained or 1/2 c. STonewall Kitchen Salsa Verde
- 1/2 c. cilantro leaves
- 2 T. finely pickled jalapenos
- 2 scallions, finely chopped
- 1 jar Stonewall Kitchen Spicy Corn Relish
- 8 oz sour cream
Sparkling Autumn Sangria

In a large pitcher or glass jar, combine sliced fruit, apple juice and orange liqueur
- 2 tart apples, Pink Lady or Braeburn, thinly sliced
- 2 Anjou pears, thinly sliced
- 6 tangerines, thinly sliced
- 2 c unfiltered apple juice
- 1 1/2 c orange liqueur, like Cointreau
- 2 750-ml bottles sparkling wine, Prosecco or Cava, chilled
