Apple French Toast Casserole

place melted butter, sugar, cinnamon, and oats in the bottom of a 13x9-inch baking dish
- 1/2 cup butter, melted
- 1/2 cup sugar
- 2 tsp cinnamon
- 1/2 cup oats (old fashioned or quick cook)
- 2 large or 3 small granny smith apples, peeled, cored, and thinly sliced
- 8 , 1-inch slices of french bread (about 3/4 of a loaf depending on how big it is)
- 1 cup heavy cream
- 5 eggs
- 1 tsp vanilla
- 1/4 tsp salt
- 2 Tbsp sugar
- 1/2 tsp cinnamon
Oatmeal Coconut Almond Chocolate Chunk Cookies

Preheat oven to 350 degrees
- 1 3/4 cup all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 1 1/4 cups packed light-brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 Tbsp milk
- 1 1/2 tsp vanilla extract
- 1/4 tsp coconut extract (or 1/2 tsp for more coconut flavor)

- 1/4 cup pure maple syrup
