Made from Scratch Strawberries & Cream Cake

Preheat oven to 325 degrees
- 3 C. Flour
- 2 C. Sugar
- 1 1/2 T. Baking Powder
- 3/4 t. Salt
- 3/4 C. Vegetable Oil
- 1 1/2 C. Strawberry Puree
- 1 t. Vanilla
- 1 t. Lemon Juice
- 4 Eggs, beaten
- Red or Pink Food Color, if desired
- 3 C. Heavy Whipping Cream
- 1/4 C. Sugar
- 3-5 Strawberries, stems left on, quartered
Cinnamon Sugar Blondies

Preheat oven to 350 degrees
- 1/2 cup butter, melted
- 1 cup brown sugar
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 cup flour
- pinch of salt
- 5 teaspoons sugar

Preheat oven to 350. Combine dry ingredients in a small bowl, add butter and mix thoroughly
- 3/4 cup butter (melted)
- 3/4 cup packed brown sugar
- 1 cup gluten free flour mix (I used Bob's Red Mill All Purpose Blend)
- 1 cup oats (Bob's Red Mill gluten free oats)
- 1 tsp baking soda
Carrot Cake Ice Cream

Chill a medium mixing bowl and the beaters of an electric mixer
- 6 ounce reduced fat cream cheese
- 3/4 cup sugar
- 1 cup cold sour cream
- 1 cup cold heavy cream
- Pinch of coarse kosher salt
- 3 tablespoons fresh lemon juice
- 1/4 teaspoon vanilla extract
- 1/4 cup butter
- 3/4 cup brown sugar
- 1 1/2 cups shredded carrots
- 1 teaspoon cinnamon
- 2 teaspoon ginger
Chicken Gyro Salad with Tzatziki Sauce

Preheat the grill to high heat
- For the Tzatziki Sauce:
- 1 cup plain greek yogurt
- 1 hot house cucumber
- 1 lemon, zest + 1 Tb. juice
- 1 Tb. olive oil
- 1 garlic clove, minced
- 1 Tb. fresh chopped dill
- 1/2 tsp. salt
- 1/4 tsp. pepper
- For the Chicken:
- 1 lb. boneless skinless chicken breast
- 1 Tb. red wine vinegar
- 2 Tb. olive oil
- 1 large garlic clove, minced
- 1 tsp. dried oregano
- 1/2 tsp. crushed dried rosemary
- Salt and pepper
- For the Salad:
- 2 pieces flat bread (or 4 if making classic gyros, not the salad)
- 1 cup fresh mint leaves
- 1 small red onion, sliced thin
- 1 cup sliced cucumber
- 1 cup sliced tomato wedges
- 6 cups chopped romaine lettuce (2 cups for classic gyros)
Meyer Lemon Cake

1. Preheat the oven to 350 degrees F
- For the Cream Cheese Icing:
- 2 1/2 cups granulated sugar, divided use
- 1/3 cup grated lemon zest (6 to 8 large Meyer lemons)
- 1/2 pound (2 sticks) unsalted butter, at room temperature
- 4 large eggs, at room temperature
- 3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 3/4 cup freshly squeezed Meyer lemon juice, divided use
- 3/4 cup buttermilk, at room temperature
- 1 1/2 teaspoons pure vanilla extract
- 8 ounces cream cheese, at room temperature
- 2 cups confectioners' sugar, sifted
- 2 tablespoons milk
- 1 tablespoon freshly squeezed lemon juice
- 1/2 teaspoon pure vanilla extract
Bananas Foster French Toast

Preheat an electric griddle (preferable) or skillet to medium heat
- For the French Toast:
- 1 loaf of your favorite artisan bread
- 3/4 cup milk
- 3 eggs
- 1 tsp vanilla or maple extract
- For the Maple Caramel Syrup:
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/2 cup heavy whipping cream
- 1/2 tsp maple extract
- 1/2 tsp vanilla extract
- pinch of salt
- Additional:
- 2 bananas, sliced
- 1/2 cup chopped pecans
- optional: whipped cream or vanilla ice cream
Inside-a-Watermelon Margaritas

Carefully cut a hole in the watermelon large enough to fit your beater blade
- 1 seedless, ripe watermelon (about 10-12 pounds. Anything larger, the beater blades won't reach inside to blend)
