Dan Dan Noodles

First, make the sauce. Place the oil and szechuan peppercorns in a small saucepan over a low heat
- For the sauce:
- 2 tbsp peanut oil
- 1 tbsp szechuan peppercorns
- 3 tbsp soy sauce
- 1 tbsp Chinese black vinegar
- 2 tsp toasted sesame oil
- 2 tsp sesame paste (get the Chinese one if you can, otherwise use Tahini)
- 2 cloves garlic, minced
- 2 tsp sugar
- For the pork:
- 1 tbsp peanut oil
- 2 cloves garlic, sliced
- 1 tbsp finely chopped ginger
- 4 oz (125g) minced pork
- 1 tsp chinese five spice
- 2 tsp sugar
- 2 tsp soy sauce
- For the noodles:
- 6 oz/150g chinese wheat noodles (or use Udon or Hokkien noodles in a pinch)
- 1 large handful Gai Lan (chinese broccoli) or your favourite greens)
- Coriander + peanuts, to serve
Creamy Caramelized Leek Soup with Maple Glazed Bacon

Make sure the leeks have been trimmed, rinsed thoroughly and patted as dry as they can be with a paper towel
- 6 cleaned and trimmed leeks (about 4 cups), sliced
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter

Spicy Thai Corn Soup with Greens

Heat the Red Curry paste in a large saucepan till aromatic (about 1 minute)
- 2 tsp Thai Red Curry paste
- 1 canned of corn kernels (400 g)/ frozen corn kernels
- 1 can coconut milk (400 g)
- 1/2 cup water (depending on the consistency of the soup you are after)
- Salt and pepper, to season
- 1 tbsp. palm sugar/brown sugar
- Greens- broccoli florets, green beans, snow peas
- Fresh herbs- Basil, Coriander, Chives
- Red Chili flakes, for garnish (optional)
Blueberry Upside Down Cornmeal Cake

Preheat oven to 350°F. Grease a 10-inch cake pan with butter; set aside
- 1 cup yellow cornmeal
- 3/4 cup whole milk
- 4 tablespoons unsalted butter
- 1/4 cup Dixie Crystals Dark Brown Sugar
- 3 cups blueberries (fresh or frozen)
- 1 cups all-purpose flour*
- 3/4 cup Dixie Crystals Extra Fine Granulated Sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3 large eggs
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.
Green Goddess Egg Salad with Avocado

In a medium bowl, mix the mayonnaise, celery, green onions, fresh herbs, capers, zest and mustard
- 8 large eggs - hard boiled, peeled, cooled.
- 1/2 cup mayo
- 2 small stalks celery, finely chopped
- 2 green onions, white and green parts, finely chopped
- 1/2 C chopped mix of any of the following herbs- Italian parsley, dill, tarragon, basil, cilantro
- 1-2 tsp. Dijon mustard
- 1- 2 Tablespoon capers
- 1 teaspoon lemon zest
- 1 avocado- ( dice half, slice half)
- 2 Cups micro greens or sprouts
- sliced radishes-- optional
- sliced tomatoes-- optional
- Kosher salt and freshly ground pepper
- Bread, or bruschetta
Super Healthy Peanut Butter Date Special K-Bars.

Grease a 9x13 inch baking dish with cooking spray or line with parchment paper
- 1 cup packed medjool dates, pitted + chopped
- pinch of kosher salt
- 1 cup creamy peanut butter
- 2-3 tablespoons almond milk, coconut milk or regular milk

- 2 cups all-purpose flour
- 2 1/4 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon ground ginger
- 3/4 teaspoon baking soda
- 1/2 teaspoon freshly grated nutmeg
- 1/4 teaspoon ground cloves
- 1 1/4 cups light brown sugar
- 4 large eggs
- 3/4 cup vegetable oil
- One 15-ounce can pumpkin puree
- 1/2 cup whole milk
- For the Cinnamon Filling:
- 1 cup brown sugar, light or dark
- 1 1/2 tablespoons ground cinnamon
- 1 teaspoon unsweetened cocoa powder (for color not for taste- you can leave it out if you want.)
- For the Crumb Topping:
- 2 cups of flour
- 2/3 cup brown sugar
- 1 tablespoon cinnamon
- 6 tablespoons butter, melted
- For the Glaze:
- 6 tablespoons of butter
- 1 1/2 cups of powdered sugar
- 2-3 tablespoons of milk
