- Milk Chocolate Toasted Coconut Butter:
- 3 medium brown bananas
- 12 lumpia wrappers, egg roll wrappers (these will be the easiest to work with) or spring roll wrappers
- Oil for frying
- 12 teaspoons honey
- 3 cups unsweetened flaked coconut, toasted
- 3 ounces milk chocolate, lightly melted (or a mix of semi-sweet, milk and or dark)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon flaked seat salt

For the APPLE FILLING: Melt the butter in a saucepan over medium heat
- APPLE FILLING:
- 2 tablespoons/45ml butter
- 3 tablespoons/45ml brown sugar
- 1/2 teaspoon/2ml cinnamon
- 6 apples, such as Honeycrisp, Cortland, Spartan or Empire, peeled, halved, cored and cut into 1/2-inch cubes (about 3 cups)
- TURNOVER:
- 1 pound/450g puff pastry
- All-purpose flour, for the work surface
- 2 eggs
- 2 tablespoons/30ml confectioners' sugar, sifted
- Soft, fresh sheep's or goat's milk cheese, yogurt or ice cream, for serving

- KHAO SOI PASTE:
- 4 large dried New Mexico or guajillo chiles, stemmed, halved, seeded
- 2 medium shallots, halved
- 8 garlic cloves

- 2 tablespoons vegetable oil
- 2 14-ounce cans unsweetened coconut milk
- 2 cups low-sodium chicken broth
- 1 1/2 pounds skinless, boneless chicken thighs, halved lengthwise
- 1 pound Chinese egg noodles
- 3 tablespoons (or more) fish sauce (such as nam pla or nuoc nam)
- 1 tablespoon (packed) palm sugar or light brown sugar
- Kosher salt
- Sliced red onion, bean sprouts, cilantro sprigs, crispy fried onions or shallots, chili oil, and lime wedges (for serving)
- Ingredient info: Dried chiles are available at Latin markets; Chinese egg noodles and chili oil are available at Asian markets. All can be found at many supermarkets.
