Susan Lucci's Apple Cake

Preheat oven to 350. Line an 8x8x2 pan with parchment paper, or grease pan with butter
- 1 1/2 c. flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 cup sugar, divided
- 1 egg, well beaten
- 1/2 c. milk
- 1/2 c. butter, melted
- 5 tart apples, peeled, cored and cut into eighths
- 1/2 tsp. cinnamon
Ham Quiche

Mix all ingredients except cheese and ham in blender
- 3 eggs
- 1/2 c. melted butter
- 1/2 c. Bisquick
- 1 1/2 c. milk
- 1 cup shredded cheese (Jack or Swiss)
- 1/2 c. chopped ham
Mom's famous apple pancakes

Combine all ingredients, stirring until smooth
- 2 1/2 cups cake flour
- 3 eggs
- 1/2 cup sugar
- pinch of salt
- 4 tsp. baking powder
- milk--use enough to make a pancake consistency
- sliced apples.
Creamy Kale Gratin

Heat a lg.pot of well salted water to a boil
- 6 Tbsp. unsalted butter
- 1/2 cup chopped Spanish or white onion
- 2 whole cloves
- 1/4 cup flour
- 2 cups milk
- 3 bunches kale, roughly chopped--about 1 1/2 lbs.
- 1/2 cup plus 2 Tbsp grated parmesan
- kosher salt
- 1/4 tsp. freshly grated nutmeg

- 3 Tbsp lime juice (or more as needed)

Pumpkin Pie

- 2 large eggs
- 1 15 ounce can pumpkin (not pie mix)
- 3/4 cup sugar
- 1 1/2 tsp. ground cinnamon
- 1/2 tsp. salt
- 1/2 tsp. ground ginger
- 1/2 tsp. ground cloves
- 3/4 cup half-and-half
- 1 unbaked 9-inch pie shell
Hawaiian curried shrimp

Melt the butter in a lg. saucepan over medium heat
- 6 Tbsp. butter
- 1 medium onion, finely chopped
- 2 tsp. finely chopped fresh ginger
- 6 Tbsp. flour
- 1 1/2 tsp. salt
- 2-3 tsp. curry powder
- 2 cups milk
- 1 cup coconut milk. (you can use canned)
- 3 cups. cooked shrimp

Oven-baked Chicken Parmesan

- 6 boneless chicken breast halves
- 1 packet Shake n Bake chicken mix.
- 2 cups spaghetti sauce
- 1 12/ c. shredded mozzarella cheese
- 1/4 cup parmesan cheese
