- 1 1/2 cups diced dried pineapple diced
- 1 1/2 cups dark or golden raisins
- 1 cup diced dried apricots diced
- 1 1/2 cups dried dates diced
- 1 cup dried sour cherries
- 1/3 cup crystallized ginger diced
- 1 cup dark spiced rum
- Rum Syrup
- ½ cup water
- 1 cup sugar
- ½ cup dark spiced rum
- Batter
- 1 cup unsalted butter softened
- 2 cups dark brown sugar
- 1 teaspoon salt
- 1 ½ teaspoon ground cinnamon
- ½ teaspoon ground allspice
- 1/4 teaspoon ground nutmeg
- 1 teaspoon baking powder
- 4 large eggs room temperature
- 3 cups all-purpose flour
- 2 tablespoons dark cocoa powder
- 1/4 cup boiled cider or dark corn syrup
- 1/2 cup cranberry or apple juice
- 2 cups toasted pecans or walnuts chopped
