- 1 (16 ounce) package cheese tortellini
- 1 (14.5 ounce) can diced tomatoes with garlic and onion
- 1 cup chopped fresh spinach
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 teaspoons dried basil
- 1 teaspoon minced garlic
- 2 tablespoons all-purpose flour
- 3/4 cup milk
- 3/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
ROMANO CHICKEN WITH LEMON GARLIC PASTA

Instructions ROMANO CHICKEN: Place parmesan cheese in a shallow dish
- ROMANO CHICKEN:
- 1/2 lb chicken breasts, butterflied or thinly cut into cutlets
- salt and pepper
- 1/2 cup finely grated parmesan cheese
- 1 egg
- dry parsley
- 1/2 cup panko bread crumbs, homemade or store-bought
- oil for frying - I used combination of olive oil and sunflower oil
- LEMON GARLIC PASTA:
- 1/2 lb linguine or spaghetti or other pasta
- juice from 1 lemon, or to taste
- 3 cloves garlic, minced
- zest from 1/4 lemon
- 2 Tbsp butter, cold
- 2-3 Tbsp whipping cream, or to taste
- salt, pepper

- 1 cup unsalted butter, room temperature
- 2 cups sugar
- 4 eggs
- 2 teaspoons vanilla
- 5 cups flour
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- Cream the butter and sugar together until fluffy. Add the eggs, one at a time, mixing well after each addition. Meanwhile, mix the dry ingredients together in a separate bowl. Add the vanilla to the creamed mixture and then slowly add the dry ingredients.
- Press into a greased 13 x 18 inch pan and bake at 375F for 10-15 minutes.
- Cool and frost.
