Healthy Slow Cooker Chicken Potato Soup

Place a skillet over medium heat
- 4 slices bacon, chopped (could be low fat turkey bacon)
- 1 large onion, peeled and chopped
- 3 garlic cloves, minced
- 3 pounds russet potatoes, peeled and sliced thin
- 1 1/2 pounds boneless skinless chicken breast
- 2 cups sliced carrots
- 2 cup sliced celery
- 8 cups chicken broth
- 1 teaspoon dried thyme
- 1/3 cup fresh chopped parsley
- Salt and pepper

In a food processor or blender, blend the milk, eggs, and 1 TB melted butter until combined
- 1 cup whole milk
- 2 large eggs
- 3 TB salted butter, melted and divided
- 1 cup all purpose flour
- 1/4 tsp table salt

Hamburger Veggie Soup

1.In a sauté pan add ground beef and partial brown
- 1 lb ground beef
- 4 green onions, finely chopped, including the green parts
- 2 large garlic cloves or 4 small garlic cloves, minced
- additional salt and pepper for browning the ground beef
- 9 cups of vegetable or chicken broth (low sodium)
- 5 cups cubed potatoes, about 5 small potatoes
- 2 cups sweet petite baby carrots
- 2 cups fresh French green beans (cut into 3 sections, bite size pieces)
- 2 celery stalks (cut crosswise into 3 sections)
- 1- 6 oz tomato paste
- 1/2 tsp kosher salt (or to taste)
- 1/2 tsp fresh ground pepper (or to taste)
- 2 tsp garlic and herb seasoning (I use McCormick)
- 1 tsp Tony's Chachere's creole seasoning (or to taste)
- 12 oz package frozen sweet corn
Stovetop Yankee Pot Roast

1.Heat the oil in a heavy, cast iron pot over medium heat
- 1/4 cup olive oil
- 1 (3 pound) beef round tip roast
- flour for dredging
- 3 medium onions, sliced
- 3 large carrots, peeled and cut into small chunks
- 3 large stalks celery, diced
- 4 cloves garlic, minced
- 3 whole allspice berries
- salt and pepper to taste
- 1 cup dry red wine
- 2 (12 ounce) cans beef broth
- 2 tablespoons cornstarch dissolved in a small amount of water
Chocolate Hazelnut Crostata

preheat oven to 350. prepare the crust per package instructions
- 1 9 inch frozen pie shell
- 3/4 cup semisweet chocolate chips
- 1 cup hazelnuts, lightly toasted, skinned and chopped
- 2 large eggs, plus 2 large egg yolks beaten
- 1/4 cup heavy cream
- 2 tbsp. melted butter
- 1 tbsp. orange zest
- 1 cup pure maple syrup
- 1 cup granulated sugar
- 2 tsp kosher salt

Preheat oven to 350 degrees
- 12 oz boneless skinless chicken breast tenders, grilled
- 1 teaspoon olive oil
- 1 green bell pepper, sliced
- 8 ounces mushrooms, sliced
- 1 large onion, sliced
- 1 clove garlic, minced
- 1 teaspoon oregano
- Kosher salt and pepper, to taste
- 1 tablespoon dijon mustard
- 1/2 cup reduced fat mozzarella cheese
Chicken Parmesan Burgers

Transfer ground chicken to a large bowl, add bread crumbs, egg, parsley, Parmesan and minced garlic
- 1 pound ground chicken
- 1 egg, lightly beaten
- 1/4 cup flat leaf parsley, finely chopped
- 1/4 cup Italian breadcrumbs
- 1/4 cup Parmesan cheese
- 2 cloves garlic, minced
- 1/4 tsp crushed red pepper flakes
- 4-6 slices mozzarella cheese
- 1/4 cup marinara sauce
- 4-6 hamburger buns
- 1 T butter
- 1/2 tsp garlic powder
Fried Ravioli

Bring ravioli and eggs to room temperature
- 1/2 c Kikkoman Panko bread crumbs
- 1/2 c Italian seasoned bread crumbs
- 1 tsp Italian seasoning
- 1/2 tsp kosher salt
- 10-14 store bought fresh ravioli – not frozen (I used jumbo four-cheese)
- 2 eggs
- 1/3 c milk
- oil for frying
- marinara sauce for dipping (optional)
