Chicken and Barley Soup

Heat oil in a large pot over medium heat
- 1 3/4 lbs boneless skinless chicken breast, cooked and shredded
- 2 Tbsp olive oil
- 1 1/2 cups chopped carrots (about 4)
- 1 1/2 cups chopped celery (about 4)
- 1 1/2 cups chopped yellow onion (1 large)
- 2 cloves garlic, minced
- 4 (14.5 oz) cans low-sodium chicken broth, plus more as desired
- 3/4 cup pearl barley (uncooked)
- 2 bay leaves
- 1 tsp dried sage
- 1/2 tsp of each dried rosemary, thyme, and marjoram
- Salt and freshly ground black pepper, to taste
- 1/4 cup slightly packed, chopped fresh parsley
- 1 Tbsp fresh lemon juice
M & M's Chocolate Chip Cookie Bars

1.Preheat oven to 350F. Line an 8-by-8-inch baking pan with aluminum foil, spray with cooking spray; set aside
- 1/2 cup unsalted butter (1 stick), melted
- 1 large egg
- 1 cup light brown sugar, packed
- 1 tablespoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon salt, or to taste
- 1 cup Crispy M&M’S (or your favorite M&M'S like Dark, Pretzel, Peanut Butter, etc.), plus more for sprinkling
- 3/4 cup semi-sweet chocolate chips, plus more for sprinkling
One Pan Balsamic Chicken and Veggies

In a mixing bowl whisk together salad dressing, balsamic vinegar, honey and red pepper flakes, set aside
- 1/4 cup + 2 Tbsp Italian salad dressing (I recommend using Kraft light Italian it's the perfect consistency for this and it's what I used)
- 3 Tbsp balsamic vinegar
- 1 1/2 Tbsp honey
- 1/8 tsp crushed red pepper flakes (more or less to taste)
- 1 1/4 lbs chicken breast tenderloins
- 2 Tbsp olive oil
- Salt and freshly ground black pepper
- 1 lb fresh asparagus, trimmed of tough ends, chopped into 2-inch pieces (look for thinner stalks. Green beans are another good option)
- 1 1/2 cups matchstick carrots
- 1 cup grape tomatoes, halved
SLOW COOKER CREAMY LEMON CHICKEN

DIRECTIONS: In a large cast iron skillet add 1 tablespoon of butter to melt on medium high heat

- 6 tablespoons unsalted butter, divided
- 1/2 teaspoon seasoned salt
- 1/4 teaspoon coarse ground black pepper
- 1 teaspoon Italian seasoning
- 2 lemons, juiced and zested
- 2 garlic cloves, minced
- 1 cup half and half
- 1 tablespoon cornstarch
- 1 tablespoon chicken base (optional, but delicious!)

DIRECTIONS 1. In a large bowl or shallow plate, season and combine chicken strips with salt, and pepper
