Stacked Roasted Vegetable Enchiladas

Preheat the oven to 425 degrees F
- 1 poblano chile, cut into matchsticks
- 2 red bell peppers, cut into matchsticks
- 1/2 head of cauliflower, cut into 1/2-inch chunks
- 1 small sweet potato, peeled and cut into 1/2-inch cubes (about 1 1/2 cups)
- 1 medium onion, halved and slivered
- 1 cup corn kernels, fresh or frozen
- 3 T heat-safe oil like grapeseed or coconut
- 1 1/2 tsp ground cumin
- 2 garlic cloves, minced
- salt and black pepper
- 1/2 cup chopped fresh cilantro
- 2 cups homemade or store bought salsa/pico de gallo
- 2 ounces baby spinach leaves (about 2 big handfuls)
- 9-10 corn tortillas, halved (try making homemade tortillas!)
- 2 cups shredded cheese (I used a cheddar-Monterey Jack blend)
- sour cream and thinly sliced scallions (green onions) for garnish, if desired

Instructions Stir together the whipping cream, milk, vanilla, and chocolate chips in a crockpot
- 1.5 cups whipping cream
- 1 14oz can sweetened condensed milk
- 6 cups milk
- 1 teaspoon vanilla
- 2 cups of chocolate chips (milk chocolate OR semi-sweet depending on how sweet you like it. I have a heck of a sweet tooth, and I love the milk chocolate, but others prefer the semi-sweet)
Butternut Squash Soup

- 2 butternut squash
- olive oil
- salt
- freshly ground white pepper
- 1 small onion, chopped
- 2 cloves garlic, chopped
- 2 tbsp. minced fresh ginger
- 1 sachet (3 sprigs thyme, 1 bay leaf, and 1/2 tbsp. coriander seeds)
- 1/2 cup orange juice
- 3/4 cup crème fraiche
- 3 sprigs fresh sage, leaves only

- 1 cup butter, at room temperature (2 sticks)
- 1 cup vegetable shortening (8 ounces by weight)
- 1/2 tablespoon vanilla extract
- 2 pounds confectioner's sugar (~8 cups)
- 6 tablespoons of Nesquik Strawberry Syrup
- 1-2 tablespoons of milk (or more as needed)
