TACO RANCH BITES

INSTRUCTIONS: Preheat oven to 350ºF
- 1 lb ground beef
- 1 (1-oz) package taco seasoning
- 1 (10-oz) can diced tomatoes and green chiles, undrained
- 2 cup shredded cheddar cheese
- 1 (8-oz) bottle Ranch dressing
- 5 (15-count) frozen phyllo tart shells
Medallions of Sea Bass in Lime Garlic Sauce

One day ahead: Zest and juice the lime
- 4 (8-ounce) medallions of sea bass
- 1-1/2 tablespoons ginger garlic paste (click on the link for the recipe)
- 2 chipotle peppers, drained, seeded and finely chopped
- 1/4 teaspoon cayenne pepper
- 1 lime
- 1 grapefruit
- 2 tablespoons Worcestershire sauce
- 1-1/2 tablespoons light corn syrup (or honey)
- 3 cloves garlic, finely minced
- 3 tablespoons olive oil
- 1 tablespoon kosher salt (or regular salt)
- 1 yellow onion
- 2 orange bell peppers, stemmed, seeded and sliced
- 3 tablespoons sweet basil leaves
- 2 tablespoons non pareil capers (see tips)
- 1/2 teaspoon black pepper
Apple Crisp Pie

Preheat oven to 425. Combine dry ingredients for filling in a bowl
- Filling:
- 6 cups tart apple slices (I used 5 med to large sized apples)
- 1/2 c brown sugar
- 2 Tbsp flour
- 2 tsp cinnamon
- 1/4 tsp allspice (I didn't have this on hand,
- so I used a few dashes of nutmeg and cloves)
- 1 tsp vanilla
- 1 Tbsp lemon juice
- Crisp Topping:
- 1 1/4 c flour
- 1/2 c brown sugar
- 1 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1/2 c butter, melted
Grilled Maple Dijon Pork Chops

Toss the pork chops in the marinade to coat and put them in the fridge for about 45 minutes-hour
- 4-6 medium sized chops
- 1/4 cup grainy Dijon mustard
- 1/4 cup maple syrup
- 2 tablespoons brown sugar
- 2 chopped garlic cloves
- 1 chopped shallot
- 1 teaspoon each salt, pepper, and thyme
- drizzle of light oil like grape seed or similar (this just helps them to not stick on the grill)
Caramel Apple Shortbread Crumble Bars

1.Preheat the oven to 350 degrees
- 3 C. Flour
- 3/4 C. Powdered Sugar
- 1 1/2 C. (3 sticks)Butter, softened
- 3 very large Granny Smith Apples, cored, peeled, and sliced(1/8" thickness)
- 1 1/2 C. Sugar
- 1/3 C. Water
- 3/4 C. Heavy Cream
- 2 T. Butter
- 1 t. Coarse Salt
PERFECT GRILLED ASPARAGUS

Fold up a little foil tray with raised sides
- 1 pound asparagus ends cut off or peeled, and washed
- 1/2 teaspoon garlic salt
- 1/2 teaspoon onion powder
- 1 tablespoon olive oil
- 2 tablespoons butter salted
Coconut Pound Cake

Put oven rack in middle position and preheat oven to 325°F
- 2 cups all-purpose flour plus additional for dusting
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 sticks (1 cup) unsalted butter, softened
- 1 1/2 cups sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon coconut extract
- 1 1/2 cups sweetened flaked coconut (6 oz), toasted and cooled

DIRECTIONS Preheat oven to 350º
- FOR THE CAKE
- Cooking spray, for pan
- 1 box chocolate cake mix, plus ingredients called for on box
- FOR THE FILLING
- 1 14-oz. can sweetened condensed milk
- 1/3 c. heavy cream
- 1/3 c. cocoa powder
- 1/4 c. Baileys
- FOR THE FROSTING
- 1 c. butter, softened
- 5 c. powdered sugar
- 1/2 c. Baileys
- 1/4 c. cocoa powder
- 1 tsp. vanilla
- 1/2 tsp. salt
- Chocolate curls, for garnish
Fat Burning Vegetable Bean Soup

Directions: Drain canned beans and rinse well, drain again
- Ingredients:
- 4 cups northern white beans, organic, canned
- 4 cups vegetable or chicken broth, low sodium
- 2 cups red salsa
- 1/2 cup carrots, diced
- 1/2 cup celery, diced
- 1/2 cup Italian parsley, minced
- 2 teaspoons creole seasoning
- 2 teaspoons black pepper
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
Asparagus Soup with Leeks and Herbs

cut off and reserve 1 1/2" long tips from 8 asapargus spears
- 2 1/2 lb pencil thin asparagus, trimmed
- 1 tbsp. extra virgin olive oil
- 1 tbsp. unsalted butter
- 1 medium leek, white and light green parts only, slit lengthwise, thoroughly rinsed and finely chopped
- 2 garlic cloves, finely chopped
- 6 cups homemade or high quality canned chicken or vegetable broth
- 2 tbsp. honey
- 1 tsp kosher salt, plus more as needed
- 1/4 tsp freshly ground white pepper, plus more as needed
- 1 tbsp. fresh lemon juice
- 1 tbsp. chopped fresh leaf parsley or chives
