Pumpkin Pie Crumb Bars

Preheat oven to 350 degrees
- 1 1/4 cups all-purpose flour
- 1 1/4 cups quick oats (old fashioned works too)
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/2 cup granulated sugar
- 1/2 cup packed light-brown sugar
- 3/4 cup unsalted butter, melted
- 1 tsp vanilla extract

- 1/4 cup granulated sugar
- 1/4 cup packed-light brown sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ginger
- 1 pinch ground cloves
- 1/4 tsp salt
- 1 large egg
- 1 large egg yolk
- 1/2 tsp vanilla extract
- 1 1/4 cups canned pureed pumpkin
- 1/3 cup evaporated milk or half and half
- Whipped cream and cinnamon, for serving (optional)
Chicken Parmesan Meatball Soup

The chicken meatballs can be made and frozen ahead of time
- Meatballs
- 1/4 cup + 1 tablespoon panko breadcrumbs or crushed cornflakes
- 1/2 pound ground chicken, thawed
- 1/4 cup finely chopped onion (roughly half a small onion)
- 1 clove garlic, minced
- 2 tablespoons parmesan cheese
- 1/2 teaspoon salt
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried parsley

- 1 tablespoon butter
- 1/2 cup chopped onion (roughly half a medium onion)

- 1/8 teaspoon dried thyme
- 1/8 teaspoon paprika
- 2 garlic cloves, minced
- 2 tablespoons tomato paste
- 28 ounces canned tomatoes with juice
- 2 cups + 1 cup chicken broth
- 1/4 cup shredded mozzarella cheese (plus more to garnish)

Chicken Breasts in Lemon Cream Sauce

I doubled the sauce because my chicken breast were so large
- 6 chicken breasts - boneless, skinless
- 6 tablespoons butter - divided
- 12 oz mushrooms, sliced
- flour, to dredge chicken
- 1 cup chicken broth
- 1 cup heavy whipping cream
- 3 tablespoons lemon juice (I pressed juice from 1 whole lemon)

BEER AND HONEY POTATO CHIPS WITH ONION DIP

Directions: Preheat oven to 300 with rack in the lowest position
- 1 14 oz bag of Salted Kettle Chips (I use Boulder Sea Salt, but any kettle fried chip should work)
- 1 bottle of your favorite beer (if it is a bitter beer, then your chips will taste like that, so I recommend a mild tasting beer-but that is up to you)
