- (1) 16 oz. package of brats
- salsa
- Jalapeno (optional)
- Guacamole
- 1/4 c. shredded cheddar cheese

Garlic Studded Pork Shoulder

Directions For the pork: Preheat the oven to 325 degrees F
- One 4-to-5-pound boneless pork shoulder
- Salt and freshly ground black pepper
- 4 branches fresh rosemary
- 10 cloves garlic, thinly sliced
- 2 onions, chopped
- 1 carrot, peeled and chopped
- 2 stalks celery, chopped
- 2 tablespoons flour
- 2 cups chicken stock
- Salt and freshly ground black pepper
- Special equipment: Butcher's string
Gnocchi Mac and Cheese

For the topping: Combine the cheese, parsley, crackers and bacon in a food processor
- Topping:
- 1 /2 cup freshly grated sharp Cheddar
- 2 tablespoons roughly chopped fresh parsley
- 12 butter crackers (I like Ritz)
- 4 strips crisp cooked bacon
- Mac and Cheese:
- Kosher salt
- 1 tablespoon unsalted butter
- 1 tablespoon all-purpose flour
- 2 cups whole milk, plus additional as needed
- 1 cup canned butternut squash puree
- 2 teaspoons Dijon mustard
- Freshly ground black pepper
- Two 16-ounce packages gnocchi (see Cook's Note)
- 3 cups freshly grated sharp yellow Cheddar
German Style Fried Potatoes

- 1/2 kg small potatoes, boiled in their skins (peel, then place the potatoes in the fridge overnight)
- 1 medium onion, finely chopped
- 4 thin slices of bacon or speck, cut into small cubes
- 2-3 tbsps of olive oil & butter (50/50)
- Salt and black pepper to season

- 1 cup olives
- 1 cup diced feta
- 2 tablespoon olive oil
- zest and juice of 1 lemon
- 2 cloves of garlic sliced
- 1 teaspoon chopped rosemary
- pinch of crushed red pepper
- black pepper, freshly cracked, to taste
Shrimp Burgers with Old Bay Mayo

- 1 pound peeled and deveined medium shrimp
- 1/3 cup panko breadcrumbs
- 1 tablespoon lemon juice
- 1/2 teaspoon kosher salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon freshly ground black pepper
- 2 scallions, white and green parts, thinly sliced
- 1 large egg, lightly beaten
- 1/4 cup canola oil
- 1/2 cup mayonnaise
- 1 teaspoon to 1 tablespoon Old Bay seasoning
- 4 brioche buns, halved and lightly toasted
- Avocado slices, for topping
- Lettuce leaves, for topping

Buffalo Gravy

Melt butter in a pan over medium heat
- 5 tablespoons butter
- Cracked black pepper
- 4 tablespoons flour
- 1/2 cup favorite beer
- 1/2 cup Frank’s Hot Sauce
- 1 quart turkey stock
REDDENED CATFISH

- 1/2 c. bread crumbs
- 1 tbs. grated lemon zest
- 2 tsp. paprika

- 1/4 tsp. sugar
- 6 catfish fillets
- 1 c. lime watercress sauce (recipe follows)

- 1 tb. dijon mustard
