Preheat oven to 325°. Season lamb generously with salt and pepper
- 1 trimmed boneless leg of lamb (about 5 pounds), tied as a roast

- 3 medium onions, coarsely chopped
- 5 celery stalks, coarsely chopped
- 3 carrots, peeled, coarsely chopped

- 1 red kuri, kabocha, or butternut squash
- Vegetable oil

- 4 ounces thinly sliced prosciutto, chopped
- 12 cipolline onions or 1-inch-diameter pearl onions, blanched 1 minute, peeled

- 6 large garlic cloves, pressed

- 3 oz. (about 1-1/4 cups) finely shredded sharp Cheddar (or half Cheddar and half Parmigiano-Reggiano)
- 1 tsp. table salt
- 1/8 to 1/4 tsp. cayenne
- 4 oz. (1/2 cup) unsalted butter, cut into 1/2-inch pieces, chilled
- 1 large egg yolk
- 2 Tbs. water
- 1-1/2 oz. (1/3 cup) medium finely chopped walnuts
