VEGETARIAN "NEW ENGLAND CLAM CHOWDER"

Preparation Put the oil in a soup pot and cook over low heat for 5 minutes
- Ingredients
- 2 cups chopped oyster mushrooms
- 1 teaspoon olive oil
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1 small crumbled dried chipotle pepper
- fresh thyme leaves from several sprigs (or 3 teaspoons dried)
- 3 finely chopped sage leaves (or 3 teaspoons dried)
- 1 bay leaf
- 1 1/2 cups vegetable broth or water
- 6 small red potatoes, peeled and cut into chunks
- 2 cups lactose free or soy milk
- 1 10 oz. container of Tofutti sour cream OR 1/4 cup flour (or corn starch or potato starch) diluted in 1/2 cup water
- 1 teaspoon chopped, fresh dill
Soy-Glazed Black Cod

Place the cod in a single layer in a baking dish
- 4 black cod fillets, each about 3 oz.
- 3 Tbs. soy sauce
- 2 Tbs. honey
- 1 Tbs. rice vinegar
- 1 Tbs. mirin
- 1 Tbs. sesame oil
- Juice of 1 lime
- 1/2 oz. ginger, peeled and grated
- 2 garlic cloves, minced
- 1/4 tsp. red pepper flakes
- 4 green onions, white and light green portions, thinly sliced
- 12 oz. bok choy, quartered lengthwise
- 8 oz. shiitake mushrooms, stemmed and thinly sliced
- 2 Tbs. vegetable oil
- 3 cups cooked white rice
Easy Salmon Pie

Preheat the oven to 375 degrees F
- 4 (6-ounce) center cut salmon fillets, skin removed
- 1 lemon, zested and juiced
- Kosher salt and freshly ground black pepper
- 4 tablespoons canola oil, divided
- 1 medium Vidalia onion, chopped
- 2 cloves garlic, minced
- 1 cup chopped shiitake mushrooms, stems discarded
- 2 teaspoons chopped fresh thyme leaves
- 4 cups washed, dried, and loosely packed fresh baby spinach
- 1/4 cup sour cream
- 2 frozen puff pastry sheets, defrosted
- Chopped fresh parsley leaves, for garnish
Simple Vegan Sausage

- 1/2 cup cooked white beans (great northern or navy), rinsed and drained
- 1 cup vegetable broth
- 1 tablespoon olive oil *or* 1 tablespoon tomato paste (tomato paste is a great fat replacement)
- 2 tablespoons soy sauce
- 1 1/4 cups vital wheat gluten
- 1/4 cup nutritional yeast
- 1 teaspoon granulated garlic *or* 2 cloves fresh garlic, finely grated
- 1 1/2 teaspoons fennel seed, crushed *or* 1 teaspoon ground fennel seed
- 1/2 teaspoon red pepper flakes
- 1 teaspoon sweet paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Several dashes fresh black pepper
Simple No Cheese Pizza

- 1/2 of one Trader Joe’s garlic-herb pizza crust (or half of this homemade recipe or this gluten free recipe)
- 1/2 cup each Red, Green and Orange bell pepper, loosely chopped
- 1/3 cup red onion, chopped
- 1 cup button mushrooms, chopped
- 1/2 tsp each dried or fresh basil, oregano and garlic powder
- 1/4 tsp sea salt
- 1 15-ounce can tomato sauce OR 6-ounce can tomato paste (organic when possible)
- 1/2 tsp each dried or fresh basil, oregano, garlic powder, granulated sugar
- Sea salt to taste (~1/4 tsp)
- 1/2 cup vegan parmesan cheese
- Red pepper flake + dried oregano

- 1 block (about 300g / 10.5oz) firm tofu - extra-firm tofu is ok too
- 1 cup shelled edamame, frozen is fine; or use frozen green peas
- 1 tablespoon white miso, or whatever miso you have on hand; use a gluten-free miso if you are gluten sensitive.

- 1/2 cup (120ml) instant mashed potato flakes, the plain type with no added flavorings, milk or butter, OR
- 1 medium potato, boiled, well dried and mashed
- 1 tablespoon tahini, peanut butter can be substituted
- 2 tablespoons potato starch or cornstarch, use a gluten-free brand if you are gluten sensitive
- For the glaze:
- 1 tablespoon kuzu powder, use cornstarch if you can't find kuzu
- 1 tablespoon soy sauce, use a gluten-free soy sauce if you are gluten sensitive
- 1 tablespoon mirin, use 1 tablespoon maple syrup if you don't have mirin
- sesame seeds or poppy seeds as a topping
