Portobello Mushroom Stroganoff

Bring a large pot of lightly salted water to a boil
- 3 tablespoons butter
- 1 large onion, chopped
- 3/4 pound portobello mushrooms, sliced
- 1 1/2 cups vegetable broth
- 1 1/2 cups sour cream
- 3 tablespoons all-purpose flour
- 1/4 cup chopped fresh parsley
- 8 ounces dried egg noodles

- 2 1/2 cups warm water (approximately 105 degrees F)

Salmon Pot Pies

Directions Heat oven to 400F
- 1 tbsp unsalted butter
- 8 oz shiitake mushroom caps, sliced (about 4 c)
- 4 slender leeks (about 1 lb), white and light green parts, sliced and rinsed well
- 1/2 C dry white wine
- 2 tbsp all-purpose flour
- 2 1/2 C mushroom or vegetable broth
- 1 pkg (10 oz) frozen peas
- 1/4 C half-and-half
- 1/4 C chopped fresh dill
- 1 lb cooked salmon fillet or 3 c drained canned salmon, broken into pieces
- 2 tbsp fresh lemon juice
- 1 sheet frozen puff pastry, thawed
- 1 lg egg beaten with 2 tsp water

- 1 ⁄4 cup extra-virgin olive oil
- 1 ⁄2 teaspoon pure vanilla extract
- 2 large egg whites
- 1 large egg
Crunchy Peanut Butter Thins - May 2017

Preheat the oven to 350 degrees F
- Nonstick baking spray
- 1 ⁄2 cup all-purpose flour
- 1 ⁄2 cup white whole wheat flour or whole wheat
- 1 ⁄4 cup rolled oats
- 1 tablespoon wheat germ
- 2 teaspoons chia seeds optional
- 1 ⁄2 teaspoon kosher salt
- 1 ⁄4 teaspoon ground cinnamon
- 1 ⁄3 cup creamy natural peanut butter
- 1 ⁄3 cup packed light brown sugar
- 3 tablespoons vegetable oil
- 1 large egg white
- 1 ounce bittersweet chocolate melted (about 2 small squares)
Cruelty Free Sandwich Diet: sweet & spicy caramelized onion bbq grilled cheese

Cruelty Free Diet: Why the name "Cruelty Free"? I am a vegetarian, and like meat
- 8 slices challah bread
- 4 slices sharp cheddar
- 4 slices pepper jack or other spicy cheese
- 1 large red onion, thinly sliced
- 3 Tbsp butter
- 2-4 Tbsp BBQ sauce, depending on how much you love BBQ (I used Stubb’s Sweet Hot, and it was perfect)
Juice Pulp Everything Muffins

I haven't made this yet, but I just bought a juicer and hate to throw out all that pulp
- Here is what I added:
- + 1 cup of leftover juicer pulp (I packed the cup pretty full, and I’m pretty sure I added some extra pulp in the process of mixing as well)
- + 1 1/2 cup of flour
- + 1 tsp cinnamon
- + 1/2 tsp baking soda
- + 1/2 tsp salt
- + 1/4 cup oil (coconut or canola will do just fine!)
- + 1/4 cup agave
- The recipe also called for 1/4 cup of apple sauce, but I skipped it and used more pulp instead!
- + about 1/4 – 1/2 cup of orange juice (the mix just wasn’t wet enough)
- + lime juice (squeezed from a quarter of a lime)
- + raisins, sunflower seeds, flax seeds, a splash of vanilla (other various dried fruits, nuts, flavors of your choice will most likely work!)
Shoreline Salmon Sliders and Crispy Slaw

Directions Cut the salmon into 2-inch squares so that you get 12 portions, 2 to 3 ounces per portion
- 1 1/2 to 2 pounds salmon fillet, skin removed
- 1 tablespoon lemon pepper seasoning
- Canola oil, for grilling
- 2 tablespoons spicy brown mustard
- 2 tablespoons red wine vinegar
- 1 teaspoon sugar
- One 6-ounce bag shredded red cabbage
- 2 scallions, sliced
- Salt and freshly ground black pepper
- 1/4 cup sweet chili sauce
- 1/4 cup tartar sauce
- 1/4 cup whipped cream cheese, softened
- 12 mini buns or dinner rolls
