Vietnamese Sandwiches With Tempura Sweet Potato and Avocado (Vegan Banh Mì) Recipe

Preheat oven to 350°F. Heat oil in a large wok, Dutch oven, or deep fryer to 400°F
- 1 1⁄2 quarts vegetable peanut, or canola oil
- 1 ⁄2 cup all-purpose flour
- 1 ⁄4 cup cornstarch
- Kosher salt
- 3 ⁄4 cup ice cold seltzer water (See note)
- 1 sweet potato cut in half lengthwise, then cut into 1/4 to 1/8-inch planks
- 4 Vietnamese-style baguettes or four soft hoagie rolls
- 2 teaspoons liquid aminos such as Maggi or Bragg's
- 1 avocado thinly sliced
- 1 recipe Hainnanese Ginger-Scallion Oil
- 1 recipe Vietnamese Pickled Carrots and Daikon (do chua)
- 1 cucumber seeds removed, split lengthwise into 8 spears
- 1 jalapeño pepper seeds and stem removed, sliced into thin spears
- 1 bunch cilantro leaves and fine stems

- Roasted Mushroom Gravy
- 8 oz cremini mushrooms, sliced

- 1 ⁄4 cup toasted, chopped walnuts
- 1-2 teaspoons fresh thyme leaves

Start by making the dough
- dough:
- 1 cup warm water, separated in two 1/2 cup portions
- 1 teaspoon active dry yeast
- 3 cups all purpose flour or bread flour, divided
- 1/4 cup coconut oil
- 1/2 teaspoon vital wheat gluten (can be eliminated if using bread flour)
- 1/2 cup sugar
- Pinch of salt
- For the filling:
- 2 tablespoons oil
- 1 medium onion, diced
- 1 block extra firm tofu (drained, pat dry and cut into 1/2-inch cubes)
- 2 1/2 tablespoons soy sauce
- 1/2 teaspoon dark soy sauce (optional)
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 teaspoon sesame oil
- 1 tablespoon hoisin sauce
- white pepper, to taste
- 1 1/4 cups water or vegetable stock
- 2 tablespoons flour
- Sugar water to coat the buns:
- 1 tablespoon sugar
- 2 tablespoons warm water
