- 2.50 cup(s) all-purpose flour, spooned and leveled, plus more for rolling
- 3/4 cup(s) granulated sugar
- 3/4 teaspoon(s) baking powder
- 1/2 teaspoon(s) fine salt
- 1/2 teaspoon(s) cinnamon
- 1.00 cup(s) hazelnuts, toasted and skinned
- 1.00 cup(s) (2 sticks) unsalted butter, room temperature
- 2.00 teaspoon(s) pure vanilla extract
- 2.00 large egg yolks
- Confectioners' sugar, for dusting
- 3/4 cup(s) desired filling, (see note)
Fruity Oil Ice Cream

Place the milk and heavy cream into a medium saucepan and set over medium heat
- 3 cups whole milk
- 1 cup heavy cream
- 6 large egg yolks
- 9 ounces granulated sugar
- 1/2 cup cold-pressed fruit or nut oil, hazelnut, olive, walnut, pistachio, etc.
GRANDMA'S SNOW ICE CREAM

Slowly pour the milk over the snow, then sprinkle the vanilla over the snow
- 1 lg. bowl or pan of snow
- 1 can evaporated or condensed milk (condensed makes it richer)
- 2 tsp. vanilla
- 1 c. sugar
Ultimate Chocolate Caramel Pecan Pie

HEAT oven to 350°F. BLEND 2 cups nuts in blender until finely ground, using pulsing action
- 3 cups chopped PLANTERS Pecans, divided
- 1/4 cup granulated sugar
- 1/4 cup butter or margarine, melted
- 1 pkg. (14 oz.) KRAFT Caramels
- 2/3 cup whipping cream, divided
- 1 pkg. (8 squares) BAKER'S Semi-Sweet Chocolate
- 1/4 cup powdered sugar
- 1/2 tsp. vanilla
Mustard Fried Catfish with Tomato Relish

Sprinkle the fish with the olive oil, salt and pepper, and place into a deep dish
- Four 6-ounce U.S. farm-raised catfish fillets
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup Dijon mustard
- 2 tablespoons fresh thyme leaves
- Zest and juice of 1 lemon
- Oil, for frying
- 2 cups cornmeal
- 1 1/2 cups all-purpose flour
- 1 teaspoon crab boil seasoning, such as Old Bay
- Tomato Relish, recipe follows
- 2 cups seeded and diced tomatoes
- 2 tablespoons minced fresh cilantro
- 2 cloves garlic, chopped
- 2 green onions, chopped
- 1 jalapeno, seeded and minced
- Zest and juice of 1 lime
NO YEAST PIZZA DOUGH

Mix dry ingredients. add 3/4 cup water and oil
- 2 1/2 c. flour
- 2 3/4 tsp. baking powder (if using baking soda use half and omit salt)
- 1 tsp. salt
- 1 tbsp. oil
- 3/4 to 1 c. water
