Thailandi Salad

In a large frying pan, over medium-high heat, saute red onion and crushed garlic in olive oil
- 1 pound fettucine -- cooked
- 2 red peppers -- diced
- 2 carrots -- diced
- 1 red onion -- diced
- 1 pound button mushrooms -- sliced
- 1 head romaine lettuce -- shredded
- 1 yellow squash -- diced
- 1 green zucchini -- diced
- 1 clove garlic -- crushed
- 2 teaspoons extra virgin olive oil
- 1/2 cup teriyaki sauce
- 1 heaping Tablespoon peanut butter
- Salt -- (to taste)
Cranberry Waldorf Salad

Combine, toss and chill
- 2 small apples -- cored and chopped
- 1/4 cup celery -- chopped
- 1 1/2 Tablespoons walnuts -- chopped
- 1/3 cup cranberry orange relish
Dried Fruit Noodle Kugel

Cook the noodles. Coat a 9x13 baking dish with cooking spray
- 1 8 ounce package medium wide noodles
- 4 Tablespoons oil -- divided
- 4 large eggs
- 1/3 cup sugar
- 1 1/4 cups orange juice
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1 cup diced mixed dried fruits
- 1/4 cup raisins
- 1 medium apples -- diced
Taco Salad

Brown ground beef in frying pan and add taco powder as directed on package
- 1 pound ground beef
- 1 package Ortega taco seasoning
- 1 head lettuce -- shredded
- 3 to 6 tomatoes -- diced
- 1 can small pitted olives
- 1 bag taco chips -- crushed
- Taco sauce
Carrot Slaw

Combine all ingredients together
- 2 Tablespoons red wine vinegar
- 1/4 cup lemon juice
- 1/4 teaspoon paprika
- 1/4 teaspoon ground cumin
- 1/4 teaspoon cayene pepper
- 2 Tablespoons oil
- 1 10 ounce bag grated carrots
- Craisins
Chicken Kiev

Combine first four ingredients
- 1/2 cup bread crumbs
- 1 teaspoon basil
- 1 teaspoon oregano
- 1/2 teaspoon garlic salt
- 2 whole chicken breasts -- split in half
- 2/3 cup margarine -- melted
- 1/4 cup white wine or apple juice
- 1/4 cup chopped green onions
- 1/4 cup fresh parsley
Sweet Potato Fluff

Combine all ingredients except mini marshmallows
- 1/4 cup orange juice
- 1/4 cup margarine
- 4 cups sweet potatoes -- (about 3) cooked and mashed
- 1 7 ounce container marshmallow fluff or 1 cup marshmallows

Strawberry and Cream Cake

Preheat oven to 350. Coat 2 (9 inch) round cake pans with cooking spray; line bottoms of pans with wax paper
- CAKE
- 3/4 cup sliced strawberries
- 2 cups sugar
- 6 Tablespoons butter -- softened
- 1 3 ounce package strawberry jello
- 3 large eggs
- 2 1/4 teaspoons baking powder
- 1 1/4 cups low fat milk
- 1 teaspoon vanilla extract
- FILLING
- 1 1/2 cups frozen fat free whipped topping -- thawed
- 2 Tablespoons sugar
- 1/2 teaspoon vanilla extract
- FROSTING
- 1 8 ounce block 1/3 less fat cream cheese
- 1/4 cup butter -- softened
- 1/4 teaspoon vanilla extract
- 1 cup powdered sugar
- REMAINING INGREDIENTS
- 3/4 cup sliced strawberries
- 1 1/2 cups quartered strawberries
Caribbean Rum Cake

Preheat oven to 350. Very heavily grease and flour a 10 inch tube pan
- 1 1/2 cups (7 ounce bag) Butter Toffee Glazed nuts
- 2 cups flour
- 2 cups sugar
- 2 teaspoons baking powder
- 1 3.4 ounce package vanilla pudding
- 2/3 cup oil
- 4 eggs
- 3/4 cup (6 ounce can) pineapple juice
- 1/2 cup rum
Rice Curry

Cook rice. Combine oil, lemon juice, salt, curry, cumin, and pepper
- 2 cups uncooked basmati rice
- 1/2 cup dried currants
- 1/2 cup pistachios -- toasted
- 4 to 6 scallion -- sliced
- 1/2 cup oil
- 1/4 cup or more lemon juice
- 2 teaspoons salt
- 1 Tablespoon curry powder
- 1 teaspoon cumin
- 1/2 teaspoon coriander
- cayenne pepper -- to taste
