Cream Cheese Chocolate Pudding Squares

Preheat oven to 375. To make crust: mix the flour with the pecans and melted butter
- CRUST
- 1 cup flour
- 1/2 cup chopped pecans
- 1/3 cup butter or margarine -- melted
- CHOCOLATE PUDDING FILLING
- 2 packages chocolate pudding mix
- 3 cups milk
- CREAM CHEESE FILLING
- 8 ounces cream cheese -- softened
- 1 cup sifted confectioners sugar
- 1 cup heavy cream
Chinese Chicken

- 1/4 cup dry red wine
- 1/4 cup honey

Tangy Poppy Seed Fruit Salad

Combine pineapple, orange, kiwi, grapes, strawberries
- 1 20 ounce can pineapple chunks in juice -- reserve 1/4 cup
- Juice
- 1 orange -- peeled and sectioned
- 1 kiwi -- peeled, halved and
- Sliced
- 1 cup green or red grapes
- 1 cup quartered strawberries
- 1/4 teaspoon grated lime peel
- 2 Tablespoons lime juice
- 1 teaspoon honey
- 1 teaspoon poppy seed
Devil's Food Cake

- 1/2 cup cocoa
- 1 cup hot water or coffee
- 1 teaspoon vanilla
- 1/2 cup oil
- 1 1/4 cups sugar
- 2 eggs

- 1 teaspoon baking soda
- 1/4 teaspoon baking powder

Chicken Divan

In a small saucepan, melt 3 Tablespoons margarine
- 4 Tablespoons margarine -- divided
- 3 Tablespoons flour
- 3/4 cup chicken broth
- 1 4 ounce can mushrooms -- reserve liquid sliced
- 1 10 ounce box frozen broccoli spears -- thawed
- 2 boneless chicken breasts -- cut in half
- 1/3 cup fresh bread crumbs
- 1 Tablespoon fresh chopped parsley
Summer Beef Salad with Citrus Vinaigrette

In a small bowl, whisk the vinaigrette ingredients; set aside
- VINAIGRETTE
- 3 Tablespoons orange juice
- 3 Tablespoons cider or red wine vinegar
- 2 teaspoons honey
- 1 1/2 teaspoons dijon mustard
- 1 teaspoon oil
- SALAD
- 1 pound boneless sirloin steak -- cut into thin strips
- 1 Tablespoon oil
- 1/2 teaspoon salt -- optional
- 4 cups torn romaine
- 2 large oranges -- peeled and sectioned
- 1/2 cup sliced fresh strawberries
- 1/4 cup chopped walnuts -- toasted
Sesame Green Bean Salad

Combine all dressing ingredients
- DRESSING
- 1/4 cup soy sauce
- 2 Tablespoons sesame oil
- 2 Tablespoons chicken broth
- 2 teaspoons sesame seeds
- 3/4 teaspoon ground ginger
- 3 drops hot pepper sauce
- SALAD
- 2 packages (16 ounces each) whole frozen green beans
- 1 can (8 ounces) sliced water chestnuts -- drained and cut into strips
- 1/2 large red pepper -- julienned
- 1/4 cup thinly sliced scallions
Roasted Red Pepper Pasta Salad

- 1 12 ounce jar roasted red peppers
- 2 1/2 Tablespoons red wine vinegar
- 1 1/2 teaspoons dried rosemary
- 1/2 cup olive oil
- 3 zucchini -- sliced
- 3 yellow squash -- sliced
- 3 red onions -- sliced
- 1 pound penne pasta
