- 16 ounce package frozen edamame
- 16 ounce package frozen corn
- 1 red bell pepper -- diced
- 6 scallion -- chopped
- 1 packet Italian dressing mix (made with white vinegar and a drizzle of balsamic vinegar)
- 3 cloves garlic -- crushed

- 20 ounces winter squash -- 2 frozen, pureed packages
- 2 cups milk
- 1 1/3 cups cheddar cheese -- grated
- 2/3 cup monterey jack cheese
- 1/2 cup low fat ricotta cheese
- 1 teaspoon salt
- 1 teaspoon dry mustard
- 1/8 teaspoon cayenne pepper
- 2 Tablespoons bread crumnbs
- 2 Tablespoons parmesan cheese
- 1 teaspoon olive oil
Coffee Chicken

Pour over chicken and cover pan for first 1/2 hour
- 1/4 cup strong hot coffee -- (about 1 T. instant coffee to 3/4 cup boiling water)
- 1/3 cup ketchup
- 3 Tablespoons soy sauce
- 2 Tablespoons lemon juice
- 2 Tablespoons wine vinegar or other vinegar
- 1 Tablespoon oil
- 1/4 cup brown sugar
Double Whammies

Preheat oven to 325. Lightly grease an 8 inch square pan

- 3/4 cup plus 2T. flour
- 1/2 teaspoon baking soda

- 1/4 cup sugar

- 1 large egg -- at room temperature
- 3/4 cup chocolate chips

- 3/4 cup plus 2T. sugar
- 2 large eggs -- at room temperature

Chocolate Peppermint Snaps

Preheat oven to 350. Line two baking sheets with parchment paper
- 3 sticks butter or margarine
- 1 cup brown sugar
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 teaspoons peppermint extract or 1/8 to 1/4 teaspoon peppermint oil
- 3 cups flour
- 1/2 cup unsweetened natural cocoa powder
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 cups semisweet chocolate chips
Caramel Chocolate Chip Biscotti

Preheat oven to 350. Line a 9 by 13 inch pan with parchment paper
- 1 cup unsalted butter -- melted
- 2 cups sugar
- 1 Tablespoon vanilla extract
- 1 1/2 teaspoons caramel or butterscotch extract
- 5 eggs
- 1/2 cup finely chopped toasted almonds*
- 4 cups flour -- approximately
- 1 package caramel or butterscotch pudding mix

- 3/4 cup semisweet chocolate chips

One Pot Noodle Kugel

- 4 1/2 boiling water
- 1 cup sugar
- 1/4 stick margarine
- pepper
- 2 Tablespoons oil
- 3 Tablespoons brown sugar
- 2 eggs -- beaten
- 12 ounces fine egg noodles
Strawberry Rhubarb Soup

Cook rhubarb, uncovered, in water with sugar and orange zest until it comes to a boil
- 1 pound rhubarb -- cut into 3 inch pieces
- 3 cups water
- 1/2 cup sugar
- 1 teaspoon grated orange zest
- 2 cups strawberries
Make Ahead Vegetable Salad

Combine dressing ingredients and bring to a boil
- 6 medium tomatoes -- cut into eights
- 1 medium green pepper -- thinly sliced
- 1 medium red onion -- thinly sliced
- 1 medium cucumber -- thinly sliced
- 3/4 cup cider vinegar
- 1/4 cup water
- 2 Tablespoons sugar
- 1 1/2 teaspoons celery salt
- 1 1/2 teaspoons mustard seeds
- 1/4 teaspoon salt
- 1/8 teaspoon cayenne pepper -- (1/8 to 1/4)
- 1/8 teaspoon pepper
