Apple Stuffed Pork Chops

Preheat oven to 350 degrees F (175 degrees C)
- 1 tablespoon chopped onion
- 1/4 cup butter
- 3 cups fresh bread crumbs
- 2 cups chopped apples
- 1/4 cup chopped celery
- 2 teaspoons chopped fresh parsley
- 1/4 teaspoon salt
- 6 (1 1/4 inch) thick pork chops
- salt and pepper to taste
- 1 tablespoon vegetable oil

- 2 cups canned, diced tomatoes
- 2 cups tomato sauce
- 1 cup water
- 1/2 cup onions, diced
- 1/2 cup green bell peppers, diced

- 11/2 teaspoons Italian Seasoning
- 11/2 teaspoons The Lady's House Seasoning, recipe follows

- 1 1/2 pounds ground beef
- 6 to 9 Long strips lasagna noodles
- 12 ounces cottage cheese, mixed with 1 beaten egg and 1/2 cup Parmesan
- 1 cup Gruyere cheese, grated
- 1 cup Swiss cheese, grated
- 2 cups cheddar, grated
- 1 (8-ounce) package cream cheese
- 1 cup mozzarella, grated
Lasagna Supremo: (The Best Lasagna Ever!)

1FOR THE LASAGNA: Prepare lasagna according to package directions
- FOR THE LASAGNA
- 1 (1 lb) package lasagna noodle
- 3/4 lb ground beef
- 1/4 lb ground pork
- 1 lb Italian sausage (thinly sliced)
- 1 lb button mushroom (thinly sliced)
- 1 cup onion (chopped)
- 6 garlic cloves (minced)
- 2 teaspoons sugar
- 1 tablespoon salt
- 1 teaspoon dried basil
- 1/2 teaspoon fennel seed
- 1/4 teaspoon ground black pepper
- 2 eggs (lightly beaten)
- 2 (15 ounce) containers ricotta cheese
- 2 tablespoons dried parsley flakes
- 1 cup pitted ripe black olives (sliced)
- 1 lb mozzarella cheese (shredded)
- 1 cup parmesan cheese (grated)

- 2 (14 1/2 ounce) cans hunts chunky crushed tomatoes
- 2 (6 ounce) cans hunts tomato paste
- 1 cup stewed tomatoes (Italian style)
- 1/4 cup extra virgin olive oil
- 6 garlic cloves (cut in halves)
- 1 teaspoon chopped garlic, in juice (from jar)
- 1 shallot (diced)
- 2 tablespoons dried oregano
- 4 tablespoons dried Italian seasoning
- 1 teaspoon dried basil
- 1 tablespoon granulated sugar
Tuna Casserole

Boil noodles and set aside
- 2 cans of tuna depending on how tuna-y you want it
- 1 can of cream of mushroom with roasted garlic
- 1 cup of cream or half n half
- 1 onion diced
- 1 stalk of celery diced
- 1/2 stick of butter NOT MARGERINE!!!
- peas - amount is up to you
- extra mushrooms if you like
- shedded cheese of your choice I like provolne or cheddar
- salt and pepper to taste
- french fried onions, crushed chips or ritz crackers
- 1 bag of wide egg noodles
Cadillo

Uses left over roast (beef or pork) and the leftover gravy or juice
- 1/2 lb to a 1 lb of roast meat
- 1 onion
- a couple of tablespoons of oil or butter
- gravy or juice
- 1 can diced green chiles
- 2 tomatoes
- (opt. red peppers, squash other veggies, chipotle powder, garlic powder, etc.)
- tortillas
- grated cheese
- chopped avocado
- sour cream
- shredded lettuce and/or cabbage
- salsa
Dry Rubbed Ribs with Vinegar BBQ Sauce

- For the dry rub: *Tip: This will make enough rub for more than the recipe; store the extra in an airtight container and save it for the next time!
- 1/2 cup pimenton
- 1/4 cup kosher salt
- 1/4 cup celery salt
- 1/2 cup brown sugar
- 1/2 cup granulated garlic
- 2 tablespoons cayenne pepper
- 2 tablespoons whole cumin, toasted and ground
- 2 tablespoons whole coriander, toasted and ground

- 2 pounds russet potatoes, peeled and shredded
- 2 onions, shredded, about 1 1/2 cups
