- 1 pound Ground Chuck Or Ground Beef
- ½ cups Panko Or Other Bread Crumbs
- 1 clove Garlic, Minced
- ½ teaspoons Salt
- Freshly Ground Black Pepper
- ½ cups Milk
- 2 Tablespoons Olive Oil
- ½ whole Medium Onion, Diced
- 1 jar (large) Marinara Sauce
- 12 whole Dinner Rolls (or Slider Rolls)
- 4 slices Provolone Cheese, Cut Into Four Wedges Each
Roasted Vegetable and Beef Stew

Directions Preheat oven to 450 degrees F (230 degrees C)
- 2 pounds beef chuck roast, cubed
- 4 tablespoons olive oil
- 1 onion, chopped
- 1/4 pound fresh mushrooms, sliced
- 4 carrots, coarsely chopped
- 4 large russet potatoes, cut into quarters
- 2 stalks celery, chopped
- 4 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 bay leaf
- 2 cups beef broth
- 1/2 cup red wine
- 1/4 cup tomato paste
- salt and pepper to taste

- 1 lb ground beef
- 1 small onion, chopped
- 1 tsp chopped garlic
- 2 tsp chili powder
- 1 tsp salt
- 1/2 tsp pepper
- 1 can tomato soup
- 1 cup cheddar cheese (plus more to sprinkle on top)
- 1 cup cooked rice
- 4 medium sized bell peppers
No Peek Beef Tips

Add cubed meat to a 9 x 13 inch pan
- 2 lb. Beef tenderloin tips, Stew Meat, Chuck Roast or Chuck Eye (Cubed)
- 1 can Cream of mushroom soup
- 1 – Packet Brown Gravy Mix
- 1 pkg. Lipton dry onion soup mix
- 1 – Small Can Mushrooms
- 1 Cup Water
BLT-Style Carbonara Pasta

Bring a large pot of water to a boil
- 1 large, ripe heirloom tomato or 4 plum or Roma tomatoes
- 1 pound egg tagliatelle, such as Del Verde brand or other wide, long-cut pasta
- Salt
- 2 tablespoons extra virgin olive oil (EVOO)
- 1/3 pound lean, good-quality bacon, smoky speck or milder pancetta, chopped
- 2 leeks, halved lengthwise and sliced 1/2-inch thick, washed and dried on clean towel
- 5-6 cloves garlic, thinly sliced
- 1 small chili pepper, such as Fresno or Italian cherry chili pepper, finely chopped or thinly sliced
- 1 cup dry white wine
- A generous handful of flat leaf parsley, finely chopped
- 3 large, organic egg yolks, lightly beaten
- Lots of freshly grated Pecorino cheese
Chili's Chicken Enchilada Soup - 5 Points

- 2 tbsps vegetable oil -- * see note

- 1 1/2 c diced onion
- 4 ozs chopped green chiles -- *Betsy's addition
- 1 tsp ground cumin
- 2 tsps chili powder -- ** see note
- 1 tsp minced garlic
- 1/4 tsp cayenne pepper
- 1 c masa harina
- 8 c water -- divided
- 1 c crushed tomatoes
- 4 ozs Velveeta Light -- cut in small cube
- 22 ozs boned and skinned chicken breast halves -- cooked and cubed ***
- 19 ozs canned black beans, Progresso -- * Betsy's addition
- *Original called for 1/2 cup oil.

Skillet Lasagna

Cook pasta according to package directions
- 1 Can Hunt's Tomato Paste (6 oz each)
- 2 Cups shredded mozzarella cheese (2 cups=8 oz)
- 1 Pound Italian sausage casings removed
- 2 Cans Hunt's Diced Tomatoes with Basil, Garlic & Oregano undrained
- 6 Ounces dry campanella pasta or other pasta
Creole Gumbo

- 2 tablespoons oil
- 2 pounds shrimp, peeled and deveined

Sunny's Monte Cristo

- 8 thick slices challah bread, cut 1/2-inch thick Cranberry Spread, recipe follows
- 8 thin slices Gruyere cheese (about 1-ounce each - (4 by 4-inch, or size of challah) or grated
- 4 slices deli-sliced honey-baked ham
- 3 tablespoons mayonnaise 1 tablespoon spicy brown mustard (recommended: Gulden's)
