- 3 c quick oatmeal
- 1 tsp baking soda dissolved in 1/4 cup hot water

- 3 c. flour

Taco Soup

Directions Brown meat and onions and drain
- 1 lb ground turkey or lean ground beef
- 1 large onion, chopped
- 1 (1 ounce) package hidden valley ranch dressing mix
- 1 (1 ounce) package taco seasoning mix
- 1 (16 ounce) can pinto beans
- 1 (16 ounce) can chili beans (hot or regular)
- 1 (16 ounce) can whole kernel corn
- 1 (8 ounce) can diced Mexican-style tomatoes
- 1 (8 ounce) can diced tomatoes (any flavor)
- Mushroom
- Jalepeno
Sweet Latvian Sauerkraut

- 1 (28 ounce) jar wine-cured sauerkraut
- 2 diced apples or 1/2 cup applesauce
- 1 bay leaf
- 1 onion, finely chopped (optional)
- 1/2 teaspoon caraway seeds
- 1 pinch black pepper
- 3-4 tablespoons brown sugar or demerara sugar
- 1 tablespoon lard or bacon drippings
Meatballs Italiano

Mix ingredients. Fry a small meatball to check that it is salted to taste
- For each pound of ground pork add
- 1/3 C grated Parmesan cheese
- 1/4 C grated asiago cheese
- 1/4 C Parmigiano Reggiano
- 1 egg

- 1 (16-oz) package pound cake mix
- 1/4 cup vegetable oil
- 3/4 cup apricot nectar
- 1/3 cup apricot jam or preserves
- 1/3 cup nonfat Greek yogurt
- 2 large eggs
- 1-1/2 lbs frozen peaches
- 1-1/2 cups apricot nectar
- 1/3 cup + 2 Tbsp sugar
Zucchini Oat Bread

Low fat, healthier version
- 1 1/2 cups flour
- 2 cups oat bran
- 1 teaspoon salt
- 1 1/2 teaspoon baking soda
- 1 1/2 teaspoon baking powder
- 3 generous teaspoons ground cinnamon
- 3 eggs
- 1/4 cup vegetable oil
- 3/4 cup apple sauce (unsweetened)
- 2 cups sugar
- 3 teaspoons vanilla extract
- 3 cups shredded zucchini (not grated)
- 1 cup chopped walnuts (optional)
Tex-Mex Dip

In a shallow bowl layer 1) bean dip, 2) avocados, 3) sour cream mixture, 4) vegetable, 5) cheese
- 3 avacados, peeled
- 2 T Lemon juice
- 1/2 tsp salt
- 1/4 tsp pepper.
- Mash avacados and mix with lemon juice and seasonings. Set aside.
- 8 oz sour cream
- 1 cup mayonnaise
- 1 pkg Taco Seasoning
- Mix well and set aside.
- 2 10oz can bean dip
- 3 tomatoes cored and chopped
- 1 3o can chopped olives
- 1 bunch green onions, chopped (about 1 cup)
- 8 oz grated cheddar cheese

- 1 tsp. pickling spice
- 3 c. water
- 2 c. vinegar (5% acidity)

Best and Easiest Salsa Ever The Ninja works great for making this
- 2 28oz cans diced tomatoes
- 1 Med Onion, cut into 1 inch pieces
- 6 Cloves Garlic, peeled and cut in half
- 1-2 tsp Salt (adjust to taste)
- 1 tsp ground Black Pepper
- 1/2 tsp Cumin
- Juice of 2-3 limes
- 1/2 tsp Fresh oregano chopped
- 2 Jalepeno peppers cut into I inch pieces
- 1 Med to Large Serranno pepper cut into 1/2 inch pieces
- 4 Large Green onion cut into one inch pieces
- 1 bunch Cilantro. Cut stems into one inch pieces, Coarsely chop leaves
- 1 15oz can Crushed tomatoes (optional)
