Mexican Eggs

Mix well and pour into a greased 9x13 pan
- 10 eggs, beat until fluffy then add
- 1/2 cup flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 pint cottage cheese
- 1/2 cup melted butter
- 1 lb shredded jack cheese
- 1 4oz can diced green chiles
- Mix well and pour into a greased 9x13 pan. Bake at 350o for 35 min or until knife inserted into center comes out clear.
Sloppy Joes

- 2 lb ground beef
- 1 large onion, chopped
- 2 cans chicken gumbo soup
- 1/2 tsp paprika
- 1 tsp chili powder
- 5 T catsup
- Salt and pepper
Company Corn

A "Must have" at our Holiday dinners
- 2 cans whole kernel corn (including liquid)
- 3 eggs slightly beaten
- 1/2 cup melted butter
- 1 can evaporated milk
- 1 cup crushed saltine crackers
- 2-3 cups grated cheese (cheddar or jack)
- Salt and pepper to taste
MaPo Tofu

Spicy pork and tofu
- 2 T Oil
- 1/2 lb ground pork
- Soft Tofu cut into large cubes (not silken)
- 3 T Hot bean paste
- 2 T Soy Sauce
- 1 clove Garlic, minced fine
- 1/2 tsp Ginger minced fine
- 1 tsp black pepper
- 2 T green onion, sliced thin
- Cornstarch
- 1/4 tsp Sesame Oil
Fruit Crunch

Mix dry ingredients, add melted butter and combine until moist and crumbly
- Filling:
- 4 cups fruit (berries, rhubarb, or apricot)
- 2 Tbsp Lemon juice
- 1-2 cups sugar (adjust to taste)
- Mix together in heavy pan. Bring to boil and cook until sugar is dissolved. Thicken with cornstarch to a very thick consistency. Set aside.
- Crust:
- 3 1/2 Cups Oatmeal
- 3 Cups Brown Sugar, firmly packed
- 3 Cups Flour
- 2 – 2 1/2 Cups melted butter
- 1 tsp baking powder
- 1 tsp baking soda
Homemade Hamburger Buns (Bread Machine)

You will never want to buy hamburger buns again after trying this recipe
- 1 1/4 cups milk, slightly warmed
- 1 beaten egg
- 2 tablespoons butter
- 1/4 cup white sugar
- 3/4 teaspoon salt
- 3 3/4 cups bread flour
- 1 1/4 teaspoons active dry yeast
- 1 . Place all ingredients in pan of bread machine according to
- manufacturer's directions.
- 2 . Select dough setting.
- 3 . When cycle is complete, turn out onto floured surface.
- 4 . Cut dough in half and roll each half out to a 1" thick circle.
- 5 . Cut each half into six 3 1/2" rounds with inverted glass as a
- cutter.
- 6 . Place on greased baking sheet far apart and brush with melted
- butter.
- 7 . Cover and let rise until doubled, about one hour.
- 8 . Bake at 350 degrees F for 9 minutes.
Pea Pickin Cake

- Cake
- 1 cup oil
- 4 eggs
- 1 11oz. can mandarin orange slices including juice
- 1 box Golden Butter cake mix (Betty Crocker)
- Pour into sprayed (or greased) 13x9 pan. Bake at 350 for 30-35 minutes. Let cool completely.
Grandma Kay’s Prune Cake

Makes 8” or 9” cake. Top with Cream Cheese icing
- 2 T butter
- 1 C sugar
- 2 eggs
- 2 T Corn Syrup
- 1 C mashed prunes
- 1 T chocolate
- 1 t Cinnamon
- 1 t nutmeg
- 1 1/4 C flour
- 1 t soda dissolved in 1 C prune juice
- Bake 35-40’ @ 350.
Cranberry Sauce

Heat cranberries, orange juice and zest
- 1 1/2 lb whole cranberries
- 2 oranges (juice and zest)
- Brown sugar
- Grande Marnier liqueur
- Heat cranberries, orange juice and zest. Add brown sugar to taste (it takes quite a bit, at least 1-2 cups). Cook until berries pop. Sauce will be thick. Remove from heat. Stir in about 1/4 cup Grande Marnier. Chill.
Kanaka Stew

- 2 Cups cold water

- 1 can tomato sauce
- garlic salt
- 1 large grated carrot
