Ingredients

  • 1 1/2 cups flour
  • 2 cups oat bran
  • 1 teaspoon salt
  • 1 1/2 teaspoon baking soda
  • 1 1/2 teaspoon baking powder
  • 3 generous teaspoons ground cinnamon
  • 3 eggs
  • 1/4 cup vegetable oil
  • 3/4 cup apple sauce (unsweetened)
  • 2 cups sugar
  • 3 teaspoons vanilla extract
  • 3 cups shredded zucchini (not grated)
  • 1 cup chopped walnuts (optional)

Preparation

Step 1

Grease and flour two 8 x 4" loaf pans. Preheat oven to 325.
Mix flour, salt, baking powder, soda, and cinnamon together in a bowl.

Beat eggs, oil, applesauce, vanilla, and sugar together in a large bowl. Add dry ingredients and oat bran to the creamed mixture, and beat well. Add zucchini and nuts and mix until well combined. Pour batter into prepared pans. Bake for 70 to 80 minutes, or until toothpick inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, cool and enjoy.
