Sweet and Sour Pork

Super easy and so yummy
- Pork
- 1 pound pork loin or pork butt, cut into 1 inch cubes
- 1 teaspoon salt
- 1/4 teaspoon white sugar
- 1 teaspoon soy sauce
- 1 egg white
- 2 green onions, chopped
- Place cubed pork in a medium bowl with salt, and soy sauce. Mix in the egg white and green onions. Cover, and place in the refrigerator at least 1 hour. When ready to fry, Coat the pork with cornstarch (1/2 to 1 cup), and let it come to room temperature.
- Veggies
- 1 medium red or green bell pepper, cut into 1 inch pieces (optional)
- 1 medium onion, cut into wedges
- 1-3 stalks celery, cut into 1/2 inch
- pieces
- 2 carrots cut into slices
- 1 tablespoon vegetable oil
- Salt to taste
- Heat oil in skillet over medium heat. Stir in the celery, bell pepper, carrot, and onion, and cook until tender. Season with salt. Remove from heat, and set aside.
- Sauce
- 1/2 teaspoon soy sauce
- 1/4 cup ketchup
- 1/4 teaspoon salt
- 3/4 cup white sugar
- 1/3 cup apple cider vinegar
- 1 cup water
- 1 (8 ounce) can pineapple chunks, undrained
- 2 tablespoons cornstarch
Scalloped Corn

We call it Company Corn
- 2 cans corn (drain most of the juice)
- 1/2 cup melted butter
- 1 cup crushed saltine crackers
- 1 10 oz can evaporated milk
- 2 large eggs
- 1 lb shredded cheese (jack and/or cheddar work well)
- salt and pepper to taste
- Mix all ingredients with a fork. Pour into baking dish. Bake at 350 for 35-45 min or until set.
Beef Jerky

Mix until sugar dissolved
- 1/2 cup soy sauce
- 1/2 cup whiskey or tequila
- 1/2 cup water
- 1/2 cup brown sugar
- 4 tsp liquid smoke (4T?)
- 2 teaspoons red pepper flakes
- 3 tsp onion powder
- 6 cloves garlic, peeled and smashed
- 2 teaspoon salt
- 3 tsp meat tenderizer
- 2 teaspoon freshly ground black pepper
Politicians Dessert

Mix flour, nuts and margarine
- 1 1 1 cup flour
- 1/2 1/2 1/2 cup finely chopped pecans or walnuts
- 1 1 1 stick margarine
- 1 1 1 med and 1 small cool whip
- 1 1 1 cup powdered sugar
- 8 8 8 oz.cream cheese
- 2 2 boxes 2 small boxes chocolate instant pudding
- 1/4 1/4 1/4 cup finely chopped pecans or walnuts

- 2 cups sugar

Magic Cookie Bars

Preheat oven to 350 degrees Melt butter and mix with graham cracker crumbs
- 1/2 Cup butter or margarine
- 1 1/2 Cups graham cracker crumbs
- 1 Can Sweetened Condensed Milk (14oz)
- 1 Cup Chocolate Chips
- 1 1/3 Cups Flaked Coconut
- 1 Cup Chopped Nuts
Best-ever Macaroni and Cheese

Cook macaroni, drain. Melt butter
- 8 oz elbow macaroni (about 2 cups)
- 3 T butter
- 3 T flour
- 2 cups shredded mild cheddar cheese
- 1/2 tsp salt
- Pepper
- 2 cups shredded process cheese
Zucchini Bread

Grease and flour two 8 x 4" loaf pans
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 3 teaspoons ground cinnamon
- 3 eggs
- 1 cup vegetable oil
- 2 cups sugar
- 3 teaspoons vanilla extract
- 2 cups grated zucchini
- 1 cup chopped walnuts
Grandma Kay's Pound Cake

Cream butter and sugar, then add eggs
- 1 cup butter, softened
- 2 cups sugar
- 4 eggs beaten
- 3 cups sifted flour
- 1/4 tsp salt
- 1 tsp cream of tartar
- 1/2 tsp baking soda
- 1 tsp vanilla
- 1/4 tsp mace
- Cream butter and sugar, then add eggs. Mix on low, then slowly add dry ingredients. Pour into greased bundt pan. Bake at 350o for 1 hour.
