Mom's Turkey Meatloaf

Preheat the oven to 350 degrees F
- 3/4 cup quick-cooking oats
- 1/2 cup skim milk
- 1 medium onion, peeled
- 2 pounds ground turkey breast
- 1/2 cup chopped red bell pepper
- 2 eggs, beaten
- 2 teaspoons Worcestershire sauce
- 1/4 cup ketchup
- 1/2 teaspoon salt
- Freshly ground black pepper
- 1 (8-ounce) can tomato sauce
Gruyere & Prosciutto Strata Recipe

In a large skillet, heat oil over medium-high heat
- 2 teaspoons canola oil
- 4 ounces thin slices prosciutto, chopped
- 2 large sweet onions, chopped (4 cups)
- 1 carton (8 ounces) egg substitute
- 2-1/2 cups 2% milk
- 1/4 teaspoon ground mustard
- 1/8 teaspoon pepper
- 8 cups cubed French bread
- 1-1/2 cups (6 ounces) shredded Gruyere or Swiss cheese, divided
Bacon, Egg and Cheese Sandwiches

Heat oven to 350°F. Unroll dough on work surface; separate into triangles
- 1 can (8 oz) Pillsbury® refrigerated crescent dinner rolls
- 8 slices bacon, crisply cooked, crumbled (1/2 cup)
- 4 eggs, scrambled
- 1/2 cup finely shredded Cheddar cheese (2 oz)
- 1 egg, beaten, if desired

- 12 lasagna noodles
- 1/2 c. chopped onion
- 2 T. butter
- 3 T. all-purpose flour
- 2 c. milk
- 1 c. cottage cheese
- 2 c. shredded Monterey Jack cheese, divided
- 2 c. finely chopped fully cooked ham
- 1 (8 oz.) can mushrooms
- 1 T. dried parsley
Hand-Held Apple Pies Recipe

In a large bowl, beat cream cheese and butter until smooth
- FILLING:
- 1 package (8 ounces) cream cheese, softened
- 1 cup unsalted butter, softened
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/4 cup sugar
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground allspice
- 2 cups finely chopped peeled tart apples
- 2 tablespoons cold unsalted butter
- FINISHING:
- 1 large egg yolk
- 2 tablespoons water
- Coarse sugar and cinnamon-sugar
Quick & Easy Egg Casserole

Heat oven to 350°F. Place bread in 13x9-inch pan sprayed with cooking spray; top with sausage and cheese
- 6 slices white bread, torn into bite-size pieces
- 1 lb. breakfast pork sausage, cooked, drained

- 1 large yellow onion, cut into 2-inch pieces
- 8 ounces button mushrooms, halved
- 2 cloves garlic
- 1 tablespoon extra-virgin olive oil or canola oil
- 4 strips center-cut bacon, divided
- 5 tablespoons ketchup, divided
- 1/4 cup dill pickle relish
- 1 tablespoon Worcestershire sauce
- 1 large egg, lightly beaten
- 3/4 cup fresh breadcrumbs, preferably whole-wheat (see Tip)
- 2 pounds lean (90% or leaner) ground beef
- 1/2 cup shredded Cheddar cheese
