Chocolate Salted-Caramel Mini Cupcakes

Cupcakes: 1. Preheat oven to 350, line mini muffin tins with paper liners
- For Cupcakes:
- 1 ½-cup all-purpose flour
- ¾ cup unsweetened Dutch process cocoa powder
- 1 ½ cups sugar
- 1 ½ teaspoons baking soda
- ¾ teaspoon baking powder
- ¾ teaspoon salt
- 2 large eggs
- ¾ cup buttermilk
- 3 tablespoons vegetable oil
- 1-teaspoon pure vanilla extract
- ¾ cup warm water
- Salted Caramel Filling:
- 2 -½ cups sugar
- 2/3-cup water
- 1-tablespoon light corn syrup
- ¾ cup heavy cream
- 2 ½ teaspoons sea salt, fleur de sel preferably
- Dark Chocolate Frosting:
- ½ cup plus 1 tablespoon unsweetened Dutch-process cocoa powder
- ½ cup plus 1 tablespoon boiling water
- 2 ¼ cups unsalted butter, room temperature
- ¾ cup confectioners’ sugar, sifted
- ¼ teaspoon salt
- 1 ½ pounds best-quality semi sweet chocolate, melted and cooled
polenta dumplings with speck

These polenta dumplings, little round balls of cheesy goodness studded with speck, are pure comfort food
- 2 cups water
- 1 cup whole milk
- 14 tablespoons unsalted butter
- Fine sea salt
- 1 1/4 cups coarse polenta
- 1/4 pound speck, finely chopped
- 2 large egg yolks
- 1/4 cup freshly grated Parmigiano-Reggiano or Grana Padano cheese
- 1 tablespoon roughly chopped flat-leaf parsley
Salmon Mousse

Place smoked salmon in a blender or food processor, and blend until smooth
- 4 ounces smoked salmon
- 2 tablespoons heavy cream
- 1 (8 ounce) package cream cheese, softened
- 1/2 lemon, juiced
- 1/2 teaspoon dried dill weed to taste
- salt and pepper to taste
- 1 tsp. cayenne or hot pepper
- 1 ounce salmon roe

Set a 3 qt. soup kettle over medium heat and add the EVOO
- 2 Tbsp. EVOO
- 4 oz. chopped pancetta
- 1 medium carrot, diced
- 2 stalks celery, diced
- 1 large garlic clove, chopped
- 8 oz. Annalisa small tomatoes
- 1 can Annalisa Cannellini beans
- 2 cups plain water
- 1 cup Ditali pasta
- 1 cup freshly grated Parmigiano Reggiano cheese
- salt & chili pepper
Pomegranate, Goat Cheese & Walnut Salad

Toast walnuts in small pan over very low heat for about 15 minutes, tossing occasionally
- Dressing:
- 1 head radicchio
- 1 small bunch red-leaf lettuce
- seeds from 1 large pomegranate
- 1-1/2 cups chopped walnuts
- 4 oz. goat cheese, crumbled in pieces
- 1/2 cup red wine
- 1 Tbsp. sugar
- 1-1/2 Tbsp. red-wine vinegar
- 1/2 cup olive oil
- salt & pepper

- 1 cup fresh breadcrumbs
- 1/4 cup grated parmesan
- 2 Tbsp sweet butter
- Combine above ingredients & press into a buttered mold.

- 1 Cup chopped onions
- 1/2 cup diced red peppers
- 1/2 cup diced yellow peppers
- 2 Tbsp minced shallots
- 1 Tbsp chopped garlic
- 1/4 tsp creole seasonig
- 2 lbs. pkg. softened cream cheese (4 pkgs)
- 6 eggs
- 3/4 cups grated gouda
- 1/4 cup chopped scallions
- 1 tsp salt
- 1/2 Tbsp worchestire sauce
- 1/4 tsp cayenne pepper
- 2 Tbsp chopped parsely
- 1/2 Cup parmesan
- 3/4 cup heavy cream

Lime Salad Dressing

Place the lime in a small microwave-safe bowl and microwave until the essential oils in the skin are released
- 1 lime
- 1/8 cup chopped fresh rosemary leaves
- 1 tablespoon chopped fresh tarragon leaves
- 1/8 cup chopped fresh cilantro leaves
- 4 1/2 teaspoons stone-ground mustard
- 1 tablespoon rice wine vinegar
- 1 1/2 teaspoons chopped fresh ginger
- 1/4 cup grapeseed oil (or your choice of olive or canola oil)
- 1 ounce water, preferably bottled
- Sea salt
