COOK onion, covered in hot butter in a medium skillet over medium-low heat for 15 mins or until onion is tender
- 1 large sweet onion thinly sliced
- 1 tbsp butter (no substitutes)
- 2 tsp brown sugar
- 2 tbsp port or dry sherry (optional)
- 1 cup chopped duck breast or duck confit (5 oz)
- 6 sheets frozen phyllo dough, thawed
- 1/4 cup butter melted
- 3 oz. mascarpone cheese
Orange-Champagne Sauce

Place orange juice in a nonreactive saucepan over high heat and cook until reduced by half
- Juice and zest from 2 oranges
- 1 cup plus 2 Tbsp. champagne, divided
- 2 Tbsp. chopped shallots
- 1 bay leaf

Fabio's Chicken Piccata With Prosciutto and Artichoke

Place each chicken breast half between two sheets of plastic wrap, and pound until about a ¼ of an inch thin
- 2 boneless, skinless chicken breast halves
- 1 stick of butter, divided in half
- 4 slices of prosciutto, sliced thinly
- 4 leaves of fresh sage
- 1 small jar/can of marinated artichokes, drained (you will need about a handful of them)
- 1 cup of dry white wine
- Salt & pepper
- Olive oil

Prepare a large pot of boiling, salted water for pasta and cook according to instructions
- 8 oz. fresh fettuccine
- 1/2 stick butter
- 1/4 lb. pancetta, diced
- 1 small red onion, diced

- 1 cup dry white wine
- 2 cups tomato sauce

Preheat oven to 425°F. Cut the 6 Roma tomatoes in half lengthwise and place cut-side up on a rimmed baking sheet
- For the salad:
- 6 Roma tomatoes Olive oil 2 garlic gloves, minced.
- Salt & pepper to taste 2 6 oz balls buffalo mozzarella, in 3/4-inch slices Approx 10 leaves of fresh basil.
- For the Pesto:
- 1 lb. fresh basil, rinsed and patted dry 1 1/2 cups extra virgin olive oil 1 cup of pine nuts 2 cloves of garlic 3 oz. Parmesan cheese, grated Salt & pepper to taste.
