Salmon. Shrimp. Watermelon & Jalapeno Ceviche

combine citrus juices, watermelon juice, vinegar and jalapenos add diced salmon & shredded mint and let sit for 15
- 3 x oranges - juiced
- 2 x limes - juiced
- 200 ml watermelon juice- blend seeded watermelon
- 3 tbls sherry vinegar
- 1 x jalapeno pepper - finely diced
- 120 g finely diced salmon
- 4 x shrimp- cut in half & blanch in boiling water (few seconds only), cool in iced water
- 8 x mintleaves- cut into chiffonade
- 1/2 red onion - finely sliced
- 80 g red bell pepper puree
- fleur de sel & mill pepper to taste
- 4 x mint springs as garnish
- 20 watermelon balls (small)
Veal Milanese

Pound veal chop until approximately ¼” thick
- 4 -16 oz. veal chop
- Salt & Pepper
- 4 eggs mixed with a couple Tbsp. milk or cream
- 1 cup Panko breadcrumbs, with some fresh parsley
- 1 bunch Arugula (for top of chop)
- ¼ cup EVOO
- ¼ cup vegetable oil
- Aged Balsamic Vinegar
Roasted Asparagus With Lemon

Preheat oven to 400. Toss asparagus with olive oil and season to taste with salt and pepper
- 2 lbs asparagus
- 1/4 cup olive oil
- 1 lemon, scrubbed
- coarse salt
- fresh ground black pepper
- This dish will turn out best with thinner spears. If you cannot find thin spears make sure to peel thicker ones.
Salmon & Crab Cakes With Papaya, Mango & Pineapple Relish

Crumble whole wheat crackers in food processor until fine
- Relish:
- 8 oz. Panko bread crumbs
- 2 oz. whole wheat crackers, such as Wheatsworth Stone Ground
- 3 whole eggs
- 3 cloves garlic
- 1/2 oz. ginger
- 1 tsp Tabasco sauce or 1/2 Scotch Bonnet chili pepper
- 8 oz. Jumbo lump crab meat 1/2” sizes
- 8 oz. salmon chopped into 1/2” cubes
- 1/2 green bell pepper, finely diced
- 1/2 red bell pepper, finely diced
- 1/2 yellow bell pepper, finely diced
- 2 tbsp fresh cilantro
- Salt & Pepper to taste
- 1/2 cup Papaya, cut into small cubes
- 1/2 cup Mango, cut into small cubes
- 1/2 cup Pineapple, cut into small cubes
- 1 tbsp fresh mint leaves chopped fine
- 2 tbsp fresh cilantro, chopped fine
- 2 tbsp extra-virgin olive oil
- 1 tbsp balsamic vinegar
- Salt & Pepper to taste

Preheat oven to 350°. Line a 12-cup muffin tin with cupcake liners; set aside
- Strawberry Frosting:
- 2/3 cup fresh or frozen whole strawberries (thawed if frozen)
- 1 1/2 cups all-purpose flour , sifted
- 1 tsp. baking powder
- 1/4 tsp. coarse salt
- 1/4 cup whole milk, room temperature
- 1 tsp. pure vanilla extract
- 1/2 cup (1 stick) unsalted butter , room temperature
- 1 cup sugar
- 1 large egg, room temperature
- 2 large egg whites, room temperature
- 1/2 cup frozen whole strawberries, thawed
- 1 cup (2 sticks) unsalted butter, firm and slightly cold
- Pinch coarse salt
- 3 1/2 cups confectioners' sugar, sifted
- 1/2 tsp. pure vanilla extract
Creamy Pesto Pasta Salad

Cook pasta in salted, boiling water
- 1 (7 oz) jar pesto sauce
- 1 (7 oz. or smaller) jar mayonnaise
- 2 small cans pitted & sliced black olives; 1 for decoration and 1 to mix into salad
- 2-1/2 lbs penne pasta
- 1/4 cup parmesan cheese
- 4 or 5 small to medium chopped sun-dried tomatoes in oil, drained and 1 extra for decoration

- 2 teaspoons honey
- 2 tablespoons prepared horseradish, drained
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Tabasco sauce
- 1 tablespoon chopped tarragon
- Salt and freshly ground black pepper
- One 2 lb lobsters, steamed, meat removed and coarsely chopped
- 1 ripe avocado, peeled, pitted and diced
- 1/4 cup chopped watercress
Roasted Duck Potstickers

Mix all ingredients in bowl
- Potstickers:
- 10-12 oz. pulled roasted duck meat, chopped small
- 1 egg
- 1 tsp. soy sauce
- 1/2 tsp. minced garlic
- 1/2 tsp. minced ginger
- 1 tsp. minced scallion
- 1 tsp. minced cilantro
- pinch white pepper
- 3 Tbsp. panko bread crumbs
- 1 package egg roll wrappers or dumpling wrappers
- 2 eggs beaten
- Ginger Soy Dipping Sauce:
- (yields 2 cups)
- 3/4 cup light soy sauce
- 1/4 cup mirin rice wine
- 2 Tbsp. unseasoned rice wine vinegar
- 3 Tbsp. brown suger
- 1 cup water, more if necessary
- 1 tsp. minced ginger
- 1 tsp. minced garlic
- 2 Tbsp. sliced scallions
- 1 tsp. chili garlic sauce (optional)
- Mix all ingredients and let stand at room temp.
Blue Cheese Stuffed Bacon Sliders

- 16 slices (1 pound) apple-smoked bacon
- 2 ripe but firm pears
- 1 About 1 tablespoon sugar
- 3 pounds coarsely ground sirloin, chilled
- 1 tablespoon finely chopped fresh thyme
- Freshly ground black pepper
- 6 ounces (about 1/2 cup) crumbled blue cheese, at room temperature
- 2 tablespoons olive oil plus about 1 teaspoon
- Sea salt
- 24 soft, mini burger buns
- 2 1/2 cups baby arugula leaves
- 1 small red onion (about the same diameter as the buns), very thinly sliced
