Spaghetti Carbonara

Start boiling water for spaghetti
- 1 lb. spaghetti
- ¼ lb, pancetta, chopped
- 2 egg yolks only, beaten (1 egg yolk for 2 people)
- ¼ stick of unsalted butter
- pepper to taste
- parmigano or pecorino cheese
Kathy Hatton's Cumin Roasted Potatoes

Preheat oven to 500º Toss potatoes in mixture; spoon any remaining mixture on potatoes
- Combine:
- Cut 2 large unpeeled baking potatoes into 1/2 inch slices
- Coat baking sheet with cooking spray
- 1 tablespoon extra virgin olive oil
- 1 teaspoon ground cumin
- 1 teaspoon bottle minced garlic (I use fresh)
- 1/2 teaspoon salt
- 1/4 teaspoon ground red pepper

1. Make the cookies: Preheat the oven to 325 ̊
- Cookies:
- • 1-1⁄2 sticks (12 tablespoons) butter, at room temperature
- • 1⁄2 packed cup light brown sugar
- • 1⁄2 cup granulated sugar
- • 2 tablespoons cocoa powder
- • 6 ounces milk chocolate, melted
- • 1 teaspoon vanilla extract
- • 1-3⁄4 cups all-purpose flour
- • 2 teaspoons baking powder
- • 1 teaspoon salt
- Filling:
- • 1⁄2 cup rendered bacon fat, chilled
- • 1⁄8 teaspoon salt
- • 1⁄2 vanilla bean, seeds scraped and pod reserved for another use
- • 1 packed teaspoon light brown sugar
- • 3-1⁄2 cups confectioners’ sugar
- • 2 tablespoons milk
Chicken Piccata

Dredge chicken in flour. Heat oil in pan until hot
- 8 thin slices of chicken cutlets
- flour to dredge cutlets
- 1/4 cup olive oil
- 4 Tbsp. butter
- 1/3 cup dry white wine
- 1/2 cup chicken stock
- juice of 1 lemon
- 2 tbsp fresh chopped parsley
Couscous & Chicken Salad

- 1 box plain Cooked Couscous
- 1 rotisserie chicken, shredded
- crumbled feta cheese
- chopped tomatoes
- chopped cucumbers
- fresh basil
- olive oil
- balsamic vinegar

White Peach-Silver Tequila Cocktail

Place the peaches in a food processor and process until smooth
- • 2 ripe white peaches, peeled, pitted and chopped
- • 1/4 cup silver tequila
- • 1/4 cup peach liqueur (recommended: Creme de Peche)
- • 1/4 cup lime juice
- • 2 tablespoons simple syrup
- • Ice cubes
- • Slice peaches, for garnish
- • Mint sprigs, for garnish
Shrimp Seviche

Bring citrus juices, ketchup and garlic to a boil in a medium saucepan
- Bring to a boil:
- For the Seviche~
- 3/4 cup fresh orange juice
- 1/4 cup fresh lime juice
- 1/4 cup fresh lemon juice
- 1/4 cup ketchup
- 2 tsp. garlic, minced
- Add:
- 1-1/2 lb. extra-large shrimp, peeled, deveined, and halved lengthwise
- Stir In:
- 1 cup tomato, seeded, chopped
- 1/2 cup red onion, slivered
- 1/4 cup minced fresh cilantro
- 2 T. jalapeno, seeded, minced
- 2 T. olive oil
- 1 tsp. kosher salt
- 2 dashes hot sauce
- 2 T. fresh lime juice
- 1/4 cup kosher salt
- 1 cup avocado, diced
- 4 slices of lime
- For the Baguette Croutons~
- Slice:
- 1 loaf ciabatta
- Brush:
- 1/2 cup olive oil
- Kosher salt to taste
Turkey Cutlets w/Apples, Onions in Tarragon Cream Sauce

Slice onions. Heat 1 tbsp
- 2 onions
- 2 Tbsp. butter
- 2 Tbsp. oil
- salt & pepper
- 4 apples
- 1 lb. turkey cutlets
- 2 Tbsp. apple juice
- 1 Tbsp. apple-cider vinegar
- 1 cup heavy cream
- 1/4 tsp. dried tarragon
- 2 Tbsp. chopped fresh parsley
Pork Tenderloin wrapped in Prosciutto

Lay half the prosciutto slices on a board, overlapping them slightly, then lay 1 pork tenderloin across at one end
- 3-1/4 oz. prosciutto slices
- 2 pork tenderloins, about 12 oz. each, trimmed
- sea salt & pepper
- 2-3 Tbsp. olive oil, plus extra to oil
- 4 thyme sprigs, leaves stripped
- splash of marsala
- ladleful of chicken stock
