Ahi Tuna Tartar on Wonton Crisps

Wonton Crisps: Preheat oven to 350
- 12 Wonton wrappers (can substitute egg roll wrappers)
- 2 Tbsp, Olive Oil
- 6 oz. sushi-grade tuna, cut into 1/4" dice
- 2 Tbsp. green onion, green parts only, finely chopped
- 2 Tbsp. sesame seeds, toasted
- 2 Tbsp. soy sauce
- 1 tsp. sesame oil
- 1 tsp. peeled and grated fresh ginger
- 1 garlic clove, minced
- 3/4 tsp. orange zest
- 2 Tbsp. cilantro, finely chopped
- 1/2 tsp. Kosher salt
- 1 avocado, cut into 1/4" dice
- 2 tsp. lime juice
- Cilantro springs for garnish
Salmon or Tuna Tartare w/Red Onion, Tomato & Avocado Salsa

Chop the salmon or tuna into very small cubes
- 3/4 lb fresh skinless salmon, or sushi grade tuna
- 1/4 cup red onion cut brunoise
- 2 tbsp toasted sesame oil
- 2 tbsp finely chopped shallots
- 2 cups tomato concasse
- 1/2 cup diced avocado
- 2 tbsp lemon juice
- 1/4 cup cilantro
- 2 tbsp extra virgin olive oil
- Salt & freshly cracked black pepper
- PVC Pipe: 2” x 1 1/2”
Salmon Wrapped W/Goat Cheese & Prosciutto

Preheat oven to 450 Sauté yellow onion with garlic until soft
- 6-8 6 oz pieces of salmon
- 16 slices of prosciutto
- Olive oil for brushing
- 8 oz. goat cheese
- 4 oz. unsalted butter
- 1 diced yellow onion
- 2 tbsp chopped garlic
- 4 tbsp. fresh thyme (can use rosemary or sage)
- Kosher salt & cracked black pepper

Tuna Carpaccio

Combine vinegar and mustard in small bowl; whisk in 4 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1/4 teaspoon Dijon mustard
- 8 tablespoons extra virgin olive oil, divided
- Fine sea salt
- 1 pound sushi-grade ahi tuna steaks cut into l-inch squares
- 4 teaspoons fresh lemon juice
- 2 teaspoons thinly sliced fresh chives
- 1 teaspoon minced shallots
- 2 cups (loosely packed) watercress sprigs (about 2 ounces)

Mix ingredients together and bake at 400º, approximately 20 mins
- 1 lb. crab meat
- grilled green onions
- capers
- parsley
- egg (beaten)
- mayo
- old bay
- mustard

- • 1/2 cup grated Parmesan, plus more for broiling

- 1-1/4 cups (300 mL) granulated sugar
- 1/2 cup (125 mL) unsalted butter, at room temperature

- 2 tsp (10 mL) grated orange zest
- 3/4 cup (175 mL) milk
- 2 peaches or nectarines, pitted and thinly sliced and cut into thirds
