Egg Bacon Salad Sandwiches

- 2 eggs, hard-boiled
- 2 tbsp mayonnaise
- 1/2-1 tsp dijon mustard
- 1 tbsp finely chopped red onion or shallots
- 3 slices of crispy fried bacon
- salt, black pepper
Pork with black bean sauce (Ken Hom)

Cut the pork into thin slices 5cm long
- 450 g lean pork
- 1 tbs Shaoxing rice wine or dry sherry
- 1 tbs light soy sauce
- 2 tsp sesame oil
- 1 tsp cornflour
- 1.5 tbs peanut oil
- 1.5 tbs black beans, rinsed and coarsely chopped
- 1 tbs garlic, finely chopped
- 3 tbs spring onions, finely chopped
- 1 tbs chopped shallots
- 1.5 tbs light soy sauce
- 1 tsp sugar
- 1 tbs chicken stock or water
- 1 tbs sesame oil

Vaniljbullar

- Vaniljkräm:
- 1 msk svarta kardemummakärnor
- 3 dl mjölk
- 50 g jäst
- 1.5 dl strösocker
- 0.5 tsk salt
- 150 g mjukt smör
- 1 st ägg, ekologiskt
- 1.2 l vetemjöl special
- 5 dl mjölk, 3%
- 1 stång vanilj
- 1.5 dl strösocker
- 7 st ekologiska äggulor
- 1.5 dl maizenamjöl
- 50 g mjukt smör
Lamb Korma

- Korma Paste:
- 600 g diced lamb meat, cooked
- 2 yellow onions, thinly sliced
- 1 thumb-sized piece of fresh ginger, minced
- small bunch of fresh coriander, separated into stalks and leaves (and stalks chopped)
- 400 g (1 tin) chickpeas
- some neutral cooking oil
- 400 ml (1 tin) coconut milk
- 3 n tbsp flaked almonds
- 1 batch korma paste, see below
- 2 garlic cloves
- 1 thumb-sized piece fresh ginger
- 1/2 tsp cayenne pepper
- 1 tsp garam masala
- 1/2 tsp salt
- 2 tbsp neutral cooking oil
- 1 tbsp tomato paste
- 2 green chilis
- 3 tbsp coconut (unsweetened)
- 2 tbsp almonds, finely chopped
- small bunch of fresh coriander
- 2 tsp whole cumin seeds
- 1 tsp whole coriander seeds
Raymond Blanc's coq au vin

To marinate the chicken, bring the red wine to the boil and continue to boil until reduced by a third
- for the marinade:
- 1.5 kg organic or free-range chicken, cut into 10 pieces - you could ask your butcher to do this
- 1 heaped tbs plain flour
- 2 tbs olive oil
- sea salt and freshly ground black pepper
- 1 litre full-bodied red wine, such as Shiraz or Cabernet Sauvignon
- 3 medium carrots, cut into slanted slices 1cm thick
- 2 celery sticks, cut into slices 1cm thick
- 20 baby onions, peeled but left whole
- 1 tsp black peppercorns, crushed
- 1 bouquet garni (a few parsley stalks, 2 bay leaves and 6 sprigs of thyme, tied together)
- for the garnish:
- 1 tbs olive oil
- 200 g smoked streaky bacon, rind removed, diced
- 400 g small button mushrooms, trimmed
- 1 tbs fresh flat-leaf parsley, chopped
Wagamama's Yasai Soba Dressing

Put all the ingredients in a mixing bowl and combine until blended
