- Stuvad potatis:
- 1 kg färsk lax, mellanbiten
- 1/2 dl strösocker
- 1 dl salt
- krossad vitpeppar

- 3 msk vetemjöl
- 6 dl gräddmjölk

Moro's broad bean and dill pilav

- to serve:
- 75 g unsalted butter
- 6 spring onions thinly sliced (with all the green leaves)
- a pinch of ground allspice
- 150 g basmati rice, soaked as below
- 500 g podded broad beans or 1.5kg in pods
- 1 medium bunch fresh dill, roughly chopped
- 1/2 small bunch fresh flat-leaf parsley, roughly chopped
- sea salt and black pepper
- 200 g homemade or Greek yoghurt, thinned with 2 tbs milk and seasoned with 1/2 crushed garlic clove or a pinch of allspice
Wagamama's Green Curry Paste

Blitz all the ingredients in a processor or pound in a pestle and mortar to a fine paste
- 6 green chillies, roughly chopped
- 1 lemongrass stalk, outer leaves removed, thinly sliced
- 3 kaffir lime leaves, finely sliced
- 1 cm piece ginger root, peeled & grated
- 1 bunch of coriander stems, finely chopped
- 1 tsp cumin seeds, roasted in a hot dry frying pan
- 2 garlic cloves, peeled & roughly chopped
- 1 tbsp finely chopped shallot
- 1 tsp shrimp paste (available from Oriental stores)
- 1 tbsp vegetable oil
Raggmunk med fläsk och rårörda lingon

- 2 dl vetemjöl
- 1 tsk salt

- 50 ml unsweetened coconut
- 120 g all-purpose flour
- 1 tsp baking powder
- 200 g sugar
- 1/2 tsp salt
- 1 tsp vanilla extract
- 2 eggs
- 50 ml neutral oil
- 100 ml buttermilk/filmjolk/yogurt
- 75 g butter
- 100 g sugar
- 200 ml unsweetened coconut flakes
Simon Hopkinson's southern-style fried chicken thighs

The best thing of all about fried chicken is its crusted coating
- 8 large chicken thighs, skinned
- seasoned flour (celery salt, cayenne pepper, paprika and white pepper)
- 2 small eggs, beaten
- 100 g butter
- 50 ml pure olive oil

To speed things up, use bought duck confit
- For the duck confit:
- 200 g dried haricot beans, soaked overnight
- 3 tbsp goose or duck fat
- 1 sweet onion, peeled and chopped
- 3 large garlic cloves, peeled and crushed
- 1 large carrot, peeled and chopped
- 2 sticks of celery, chopped
- 250 g piece of dry-cured bacon, cut into large pieces
- 2 tsp tomato purée
- 1 bouquet garni (thyme sprigs, parsley stalks and a bay leaf tied with
- freshly ground black pepper
- 300 g Toulouse or Cumberland sausages
- 4 tbsp fresh white breadcrumbs
- 2 tbsp chopped parsley
- rock salt and freshly ground black pepper
- handful of thyme sprigs

- 3 duck legs
- 400-500 g goose or duck fat

- 1-2 tbsp chopped fresh coriander
