Flavorful vegetable stock

Use the pressure cooker to make vegetable stock, and it would get more of the goodness out of those onions, carrots
- lightly brown the vegetables — making sure there are a few onions and numerous carrots and a little celery; leeks are desirable and the tiniest mite of garlic not unwelcome — then add plenty of water
- And put in some salt, just a little.

- 1 liter kokta penne (pasta)

- 1 st rödlök

- 1 st kruka färsk basilika
- 2 st vitlöksklyftor
- 1 knippe gräslök
- Salt och peppar

- 0.5 dl olivolja
Emanuels paprika- och hallonmarmelad med chili

- 10 röda paprikor
- 300 g frysta hallon
- 1 dl koncentrerad äppeljuice
- 750 g socker

- 500 g small or medium red potatoes
- 1 1/2 tsp chopped, fresh rosemary

- 250 ml sour cream
- 1 tsp hot sauce

Roast butternut squash, coconut & chilli soup

This is a very comforting and warming soup using what is at hand - some lemongrass would work well
- 800 ml chicken stock or vegetable stock
- 100 g red split lentils
- 500 g squash/pumpkin
- 3 tbsp fresh coriander, chopped
- Chunk ginger, about 2 inches long, grated or finely chopped
- 2 green finger chillies, finely chopped
- 2 cloves garlic, finely chopped
- 200 ml coconut milk
- 4 shallots or one onion, finely chopped

Low-Carb Oven Fried Chicken

Flour or bread crumbs can’t produce a crisp, brown crust that compares to this
- 3 pounds chicken parts (2 breast halves, 2 thighs, 2 drumsticks, 2 wings)
- 4 ounces of pork rinds (about 1 1/2 cups of crumbled rinds)
- 1/4 cup (1 ounce) Parmesan cheese, finely grated
- Salt and pepper to taste
- 3 egg whites
- 1/4 cup heavy cream
- 1/4 cup peanut oil, light olive oil, lard, or bacon fat
- 1/4 cup butter
Spiced Chickpeas with Spinach

It’s a quick dish with tasty results
- 2 tins of chickpeas, drained, or the equivalent in dried (soaked and cooked about 600g)
- 1 tsp coriander seed
- 1 tsp cumin seed
- 1/2 tsp turmeric
- 1/2 tsp garam masala
- 1/2 tsp chilli powder
- 1 fat clove garlic, finely chopped
- 1 in root ginger, peeled and grated
- 1 stick celery, finely sliced
- 1 small onion finely chopped
- 1 tbsp tomato puree
- Juice of half a lemon
- A couple of handfuls of fresh spinach
- A handful of chopped fresh coriander
- Some light oil for frying, I used groundnut
