Individual Chicken Pot Pie with Puff Pastry

Position an oven rack in the middle of the oven and preheat to 425 degrees F
- 2 tablespoons vegetable oil, divided
- 1 1/2 pounds chicken thighs and/or breast, skin and bone removed, cut into 1/2-inch cubes
- 2 1/2 teaspoons kosher salt, divided
- 1 large yellow onion, chopped
- 8 ounces cremini mushrooms, sliced 1/4-inch thick
- 2 medium carrots, peeled and cut into 1/4-inch thick slices
- 2 medium celery stalks, cut into 1/4-inch thick slices
- 2 cloves garlic, minced
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried tarragon
- 2 ounces unsalted butter
- 3 ounces all-purpose flour
- 2 cups low-sodium chicken broth
- 1 1/2 cups 2 percent milk, room temperature
- 8 ounces frozen green peas
- 1 teaspoon freshly chopped thyme
- 1 teaspoon freshly chopped tarragon
- 10 ounces bread flour
- 2 ounces whole wheat flour
- 1 teaspoon fine kosher salt
- 10 ounces unsalted butter, cubed and frozen
- 12 tablespoons ice water
- 1 largeegg beaten
- 1 tablespoon water
Tuscan Sausage Pizza

1 Follow package directions for the pizza dough
- 1 package pizza dough mix
- 3 tablespoons olive oil, divided
- 1 package (17.63 ounce) JOHNSONVILLE® Mild Italian Pork & Chicken Sausage , skinned and cut into 1/2 inch slices
- 4 cloves garlic, chopped fine
- 1 medium onion cut into thin strips
- 8 ounces mushrooms, sliced thick
- 5 ounces mozzarella cheese, shredded
- 3 ounces shredded Parmesan
- 1 teaspoon lemon juice
- 1/2 teaspoon red pepper flakes
Apple Pound Cake

Preheat oven to 325 degrees F
- 5 jumbo-sized eggs, separated
- 1 cup buttermilk
- 4 sticks butter, plus 1 tablespoon, for pan
- 3 cups cake flour, plus 2 tablespoons, for pan
- 1 Granny Smith apple, peeled, cored and diced into 1/8-inch pieces
- 1/2 teaspoon ground cinnamon
- 1 teaspoon lemon juice
- 2 1/2 cups sugar, divided
- 1 teaspoon vanilla extract
- 1 teaspoon lemon extract
- 3 teaspoons baking powder
- Special equipment: 10-inch Bundt cake pan
Rachael Ray bacon and eggs

In a medium size skillet over medium-high heat, drizzle in some EVOO and add the bacon
- Extra virgin olive oil (EVOO), for drizzling
- 2 slices of bacon, chopped
- 2 eggs
- 2 tablespoons flat leaf parsley, chopped
- Salt and pepper
- 1/4 cup shredded yellow cheddar cheese
Roasted Thanksgiving Turkey

Remove the turkey from its packaging and remove the bags inside that hold the neck and giblets
- 1 whole fresh turkey or frozen turkey that has not been injected with sodium solution (I use a 20-pound turkey)

- 2 sticks butter, softened
- 3 tablespoons chopped fresh rosemary
- 2 tablespoons orange zest, julienned
- Special equipment: brining bag or very large pot
- 2 gallons cold water
- 3 cups apple cider
- 2 cups packed brown sugar
- 3/4 cup kosher salt
- 3 tablespoons tricolor peppercorns
- 5 whole bay leaves
- 5 cloves garlic, minced
- Peel of 3 large oranges, cut into large strips
- 4 fresh rosemary sprigs, leaves stripped off
Indian Rice Pudding

In a large nonstick saute pan over medium heat, combine the cooked rice and milk
- 1 cup cooked long grain or basmati rice
- 1 cup whole milk
- 1/2 cup heavy cream
- 3/4 cup coconut milk
- 2 ounces sugar, approximately 1/4 cup
- 1/4 teaspoon ground cardamom
- 1 1/2 ounces golden raisins, approximately 1/3 cup
- 1 1/2 ounces chopped unsalted pistachios, approximately 1/3 cup
Potato Latkes
