Balsamic Glazed Club Steaks

Preheat oven to 225. In a large grill pan or skillet, heat 1 Tbsp oil
- 4 (1/2 lb) Club steaks
- 10 shallots, thinly sliced
- 2 Tbsp olive oil, divided
- 3/4 cup balsamic vinegar
- 2 Tbsp dijon mustard
- 1 Tbsp maple syrup
- coarse salt and pepper
Oatmeal Chocolate Chunk Bars

Preheat oven to 375 degrees F
- 1 3/4 cup all-purpose flour
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup oatmeal (quick oats or rolled oats)
- 3/4 cup (1 1/2 sticks) butter, softened
- 1/2 cup granulated sugar
- 1/2 cup lightly packed brown sugar
- 1 large egg
- 1 egg yolk
- 1 teaspoon vanilla
- 12 ounces semi sweet chocolate chunks or chocolate chips
Baked Manicotti

Classic Italian cooking doesn't have to be complicated
- SAUCE
- 1 (28 ounce) can diced tomatoes, with juice
- 1 (28 ounce) can crushed tomatoes
- 2 tablespoons extra-virgin olive oil
- 3 cloves garlic, medium, finely minced
- 1/2 teaspoon red pepper flakes, optional
- 1/2 teaspoon salt
- 2 teaspoons dried basil
- CHEESE FILLING
- 3 cups part-skim ricotta cheese
- 4 ounces grated Parmesan cheese
- 8 ounces shredded mozzarella cheese
- 2 large eggs, lightly beaten
- 3/4 teaspoon table salt
- 1/2 teaspoon ground black pepper
- 2 tablespoons chopped fresh parsley leaves
- 2 teaspoons chopped fresh basil
- 16 no-boil lasagna noodles (I use the Barilla brand - apparently they are supposed to be the most similar to homemade pasta and I love them, both in this and in lasagna)
Avocado Eggrolls

Egg Rolls: Gently stir together avocado, tomatoes, onion, 1/2 teaspoon cilantro, and salt
- Egg Rolls:
- 1 large avocado, peeled, pitted, & diced
- 2 tablespoons sun-dried tomatoes packed in oil, chopped
- 1 tablespoon minced red onion
- 1 ⁄2 teaspoon fresh cilantro, chopped
- 1 pinch salt
- 3 egg roll wraps
- 1 egg, beaten
- Dipping Sauce:
- 3 -4 teaspoons white vinegar
- 1 teaspoon balsamic vinegar
- 1 ⁄2 teaspoon tamarind pulp
- 1 ⁄2 cup honey
- 1 pinch powdered saffron
- 1 ⁄2 cup chopped cashews
- 2 ⁄3 cup fresh cilantro
- 2 garlic cloves
- 2 green onions
- 1 tablespoon granulated sugar
- 1 teaspoon ground black pepper
- 1 teaspoon ground cumin
- 1 ⁄4 cup olive oil
Classic Baked Ziti

Adjust an oven rack to the middle position and heat the oven to 350 degrees
- 1 pound 1% cottage cheese
- 2 large eggs, lightly beaten
- 3 ounces grated parmesan cheese (about 1 1/2 cups)
- 1 pound ziti or other similar pasta (like penne)
- 2 tablespoons olive oil
- 5 medium garlic cloves, finely minced (about 5 teaspoons)
- 1 (28-ounce) can tomato sauce
- 1 (14.5 ounce) can diced tomatoes
- 1 teaspoon dried oregano
- 1 tablespoon dried basil (use 1/2 cup fresh basil if you have it but add it to the sauce after it has simmered and you take it off the heat)
- 1 teaspoon sugar
- Black pepper
- 3/4 teaspoon cornstarch
- 1 cup heavy cream (or substitute whole milk but increase the amount of cornstarch to 2 teaspoons and the cooking time in step 3 by 1 to 2 minutes)
- 8 ounces mozzarella cheese, cut into 1/4-inch cubes
Ceasar Salad Dressing

1. Blend all ingredients except oil
- 2 Raw eggs
- 3 cloves Garlic
- 2 Tbsp Lemon juice
- 2 Tbsp Sugar
- 1/2 tsp Salt
- 1/2 tsp Pepper

- Dough:
- 8 oz Cream Cheese, softened
- 8 oz Butter, softened
- 1/4 cup Confectioner's Sugar
- 1 tsp Vanilla Extract
- 2 1/2 cups Flour, plus more if necessary
- Cinnamon Filling:
- 6 Tbsp Sugar
- 6 Tbsp Brown Sugar
- 3/4 tsp Cinnamon
- Chocolate Filling:
- 6 Tbsp Sugar
- 6 Tbsp Confectioner's Sugar
- 3 Tbsp Cocoa
- Vanilla Filling:
- 6 Tbsp Sugar

Cinnamon Roll Caramel Popcorn

- 18 cups popped popcorn (about 3/4 cup kernels)
- 1 1/2 sticks butter (12 tablespoons)
- 1 1/2 cups lightly packed brown sugar
- 1/2 cup light corn syrup
- 1 1/2 teaspoons ground cinnamon
- 1 1/2 teaspoons vanilla extract
- 1 1/2 teaspoons baking soda
- 4 ounces white chocolate, melted
Buffalo Hot Sauce

Bring all ingredients to a boil in a medium-size saucepan
- 1/3 cup Hot Sauce
- 1/2 cup Brown Sugar
- 1/2 cup White Sugar
- 1/4 cup Honey
Spinach Ricotta Bites

Preheat oven to 350. Melt the butter and cook the onion for 4 minutes
- 2 Tbsp Butter
- 1 small Onion
- 1 clove Garlic, minced
- 2 Eggs
- 1 cup Ricotta Cheese
- 1/2 cup Shredded Mozarella
- 1/2 cup Grated Parmesan
- 10 oz Frozen Spinach, defrosted
- 1/4 tsp Salt
