Jalapeno Steak 'n' Mushrooms

Directions 1. Trim fat from meat
- 2 1/2 pounds boneless beef chuck steak, cut 1 inch thick
- 1/4 cup packed brown sugar
- 1/4 cup reduced-sodium soy sauce
- 1/4 cup Worcestershire sauce
- 2 fresh jalapeno peppers, thinly sliced*
- 2 tablespoons red wine vinegar
- 1 tablespoon quick-cooking tapioca, crushed
- 4 garlic, thinly sliced
- 1 cup snipped fresh cilantro
- 2 3 1/2 - 4 inches diameter portobello mushrooms, stemmed, gills removed from caps, and caps cut into 1/2-inch-thick slices
- 1 mediumonion, thinly sliced
- Fresh cilantro, chopped (optional)
- Hot cooked polenta, mashed potatoes, or mashed sweet potatoes (optional)

- 4 medium sweet red peppers or 4 medium green bell peppers, tops cut off and seeds and pith removed
- 15 ounces black beans, rinsed and drained
- 4 ounces shredded monterey jack pepper cheese (1 cup)
- 3/4 cup salsa
- 1 small onion, chopped (1/4 cup)
- 1/2 cup frozen corn
- 1/3 cup uncooked converted long grain rice
- 1 1/4 teaspoons chili powder
- 1/2 teaspoon ground cumin
- 8 tablespoons reduced-fat sour cream (optional)
Crockpot Caramelized Pork Ramen Noodle Soup w/Curry Roasted Acorn Squash.

*The Ramen noodles soak up a lot of the broth if not eaten immediately when the noodles are done cooking
- 2-3 pounds pork shoulder roast or butt
- 4 cups low sodium chicken broth plus more of needed
- 1/4-1/2 cup + 2-4 tablespoons low sodium soy sauce <--Use low sodium
- 1/4 cup + 2-4 tablespoons rice vinegar
- 2 tablespoons fish sauce optional
- 2 tablespoons thai red curry paste
- 1 tablespoon fresh ginger
- 1 tablespoon sambal oelek chili paste, or to taste
- The juice of 1 lime
- 1 tablespoon Chinese five spice
- 1 teaspoon black pepper
- 2 tablespoons sesame oil
- 1/4 cup + 1 tablespoon brown sugar
- 2 cups wild mushrooms left whole - or button mushrooms, sliced
- 4 packs Ramen noodles seasoning packets discarded
- 4 soft boiled or fried eggs for serving
- Chopped carrots sliced jalapenos, cilantro + green onions, for serving
- 1 medium acorn squash seeded + diced
- 2 tablespoons coconut oil melted
- 1 tablespoon curry powder I use spicy curry
- 1 tablespoon white miso paste
- 1 tablespoon brown sugar
- Pepper to taste

Preheat the oven to 375 degrees F
- Kosher salt
- Vegetable oil
- 1 pound elbow macaroni or cavatappi
- 1 quart milk
- 8 tablespoons (1 stick) unsalted butter, divided
- 1/2 cup all-purpose flour
- 12 ounces Gruyere, grated (4 cups)
- 8 ounces extra-sharp Cheddar, grated (2 cups)
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon ground nutmeg
- 3/4 pound fresh tomatoes (4 small)
- 1 1/2 cups fresh white bread crumbs (5 slices, crusts removed)

Directions: In a large skillet brown the turkey and season with salt
- For the filling:
- 1/2 lb lean ground turkey
- 1 can of black beans, rinsed and drained
- 1 can of sweet corn, rinsed and drained
- 1 large diced tomato
- 1 clove of garlic, minced
- 4 Tablespoons of chopped onion
- 3 Tablespoons of Taco Seasoning
- 1 Tablespoon of Cumin
- salt to taste
- For the peppers:
- 3 red bell peppers, cut in half lengthwise
- 1/3 cup reduced sodium, fat free chicken broth
- 9 tbsp shredded reduced-fat Cheddar cheese
- 1 tbsp chopped green onions
