Minted Lemon and Limeade

The real citrus and fresh mint in this recipe are a refreshing surprise coming out of a picnic thermos
- 4 lemons
- 3 limes
- 1/3 cup fresh mint leaves
- 3/4 cup superfine sugar, plus additional as desired
- 8 cups cold water
Dark Chocolate Almond Butter Cups

First, line your muffins tins and make your homemade chocolate
- Almond Butter Filling Ingredients:
- a large batch of homemade chocolate (see recipe below - homemade chocolate makes the recipe raw and less processed, but you can also melt down dark chocolate bars for a quicker method)
- a batch of “caramel” sauce (see recipe below)
- 1 cup natural, smooth, unsalted almond butter
- 4 Tbsp. arrowroot powder
- 2 Tbsp. maple syrup
- 2 tsp. vanilla extract
- 1/2 tsp almond extract
- 1/2 tsp. fine grain salt
- Toppings:
- sea salt flakes for topping (I use Maldon's flaked sea salt)
Panang Curry Beef with Basil

This easy-to-make dinner will satisfy your craving for Thai food
- 1 lb. flank steak, halved lengthwise
- 1 13.5-oz. can unsweetened coconut milk (do not stir)
- 2 Tbs. panang or red curry paste
- 2 Tbs. extra-crunchy peanut butter
- 5 tsp. fish sauce
- 4 tsp. dark brown sugar
- 1 medium red bell pepper, very thinly sliced lengthwise
- 1 medium onion, very thinly sliced lengthwise
- 1 cup thawed frozen peas
- 1 cup loosely packed basil leaves, torn
- 1-1/2 Tbs. fresh lime juice
Creamy Sweet Potato Soup

For a good, creamy sweet potato soup, we wanted to make it simple, and have a little bit of a kick
- 2 tablespoons oil
- 1 cup chopped onion
- 2 small celery sticks, chopped
- 3 medium sweet potatoes (about 1lb) peeled and cubed
- 1 clove garlic, chopped
- 3 cups vegetable broth
- 1 bay leaf
- 1 cinnamon stick
- 1/2 teaspoon dried basil
- 1 teaspoon fresh thyme (plus more for garnish)
- 1/4 teaspoon salt
- 1/2 teaspoon red pepper flakes
- Cubed apples for garnish

1. Prepare Brownie Crust: Preheat oven to 350°
- Brownie Crust:
- 3 (1-oz.) unsweetened chocolate baking squares
- 1/4 cup unsalted butter
- 1/2 cup sifted all-purpose flour
- 1/8 teaspoon table salt
