- 1 large red or yellow onion, trimmed, peeled and sliced crosswise into 1/2-inch-thick rounds (6 slices)

- For the waffles:
- 6 oz. (1-1/3 cups) unbleached all-purpose flour
- 2 oz. (2/3 cup) natural cocoa powder
- 1-1/2 oz. (1/3 cup) toasted, peeled hazelnuts
- 1-1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. table salt
- 3/4 cup granulated sugar
- 2 large eggs, at room temperature
- 3 oz. (6 Tbs.) unsalted butter, melted
- 1/3 cup sour cream
- 1/2 tsp. pure vanilla extract
- For the syrup:
- 3 oz. (6 Tbs.) unsalted butter
- 3/4 cup packed dark brown sugar
- 6 Tbs. hazelnut liqueur, such as Frangelico
- Pinch of table salt

1. Place oil in small saucepan
- 1 tablespoon canola oil
- 1 large sweet onion, peeled and sliced
- 1/2 teaspoon chopped fresh thyme leaves
- Cooking spray
- 2 tablespoons cornmeal
- All-purpose flour for dusting
- 1 (20-ounce) ball pizza dough, preferably whole-wheat
- 1/2 sweet firm apple, such as Pink Lady, thinly sliced
- 5 ounces Cabot White Oak Cheddar* (about 1 1/4 cups)
- Salt and ground black pepper to taste

1. Place all ingredients in a food processor
- 1 large ripe avocado (approx. 4 inches in height)
- 3/8 cup coconut butter
- 3/8 cup cocoa (use carob for a caffeine-free alternative)
- 3 Tbsp powdered coconut sugar
- 3 scoops pure stevia extract. Alternatively, use approx. 6 T of your sweetener of choice.
- 3/4 tsp vanilla extract
- 1/4 tsp salt
- 3 dashes of cayenne or chipotle pepper (optional)
- Toppings – options include cocoa powder, crushed nuts or seeds (soaked and dried), shredded coconut

- turnip greens, torn and washed
- 1/2 cup chopped sage

Easy Chicken Curry with Coconut Milk

1. Heat oil in a wide pan and add the sliced onions
- 250 gm of cleaned and cubed chicken pieces
- 1 cup of sliced onions
- 2 tbsp of oil (I use coconut oil)
- 1/2 tsp of turmeric powder
- 1 tsp of cumin powder
- 2 tsp of coriander powder
- 1/2 tsp of red chilli powder
- 1 " piece of ginger
- 2 green chillies (adjust to taste)
- 2 flakes of garlic
- A few cubes of ripe tomato
- 1 tbsp of poppy seeds, soaked for 15 mins (see notes)
- 2 cups of thin coconut milk (see notes)
- 1 cup of thick coconut milk
- A small bunch of chopped coriander leaves, for garnish
