- 1/2 pound of bacon, chopped
- 1 small onion, halved and sliced
- 1/2 cup of unsalted butter
- 1 large head of cabbage, core removed and cut into wedges or large chunks
- 1/2 cup of chicken stock, more or less
- Salt and freshly ground pepper, to taste
- 1/4 teaspoon of Cajun seasoning (like Slap Ya Mama), or to taste, optional

- When I copied this recipe it did not say what size tub of cool whip. I will try an 8oz.when I make it and post if that worked well or if larger tub is needed.

Banana-Zucchini Bread

1. In a bowl, beat eggs. Blend in sugar and oil
- 4 eggs
- 2 cups sugar
- 1 cup vegetable oil
- 2 medium ripe bananas, mashed (about 1 cup)
- 3 cups all-purpose flour
- 1-1/2 teaspoons baking powder
- 1-1/2 teaspoons baking soda
- 1-1/2 teaspoons ground cinnamon
- 1 teaspoon salt
- 1-1/2 cups shredded unpeeled zucchini
- 1 cup chopped pecans
- 1 . In a bowl, beat eggs. Blend in sugar and oil. Add bananas and mix well. Combine the flour, baking powder, baking soda, cinnamon and salt; stir into egg mixture. Stir in zucchini and pecans just until combined.
- 2 . Pour into two greased 9-in. x 5-in. loaf pans. Bake at 350° for 50 minutes or until a toothpick comes out clean. Cool for 10 minutes. Remove from pans to wire racks to cool completely. Yield: 2 loaves.
Great Northern Bean Vegetable Soup

Heat the olive oil in a 4–5 quart saucepan over medium heat until hot
- 2 tablespoons olive oil
- 2 celery stalks, chopped (approximately 1/2 cup)
- 1 medium onion, chopped (approximately 3/4 cup)
- 1/2 teaspoon kosher salt
- 2 garlic cloves, finely chopped
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried basil
- 1/4 teaspoon ground black pepper
- 2 large carrots, peeled and cut into 1/4” thick half moons (approximately 1 cup)
- 1 large red potato, peeled and cut into 1/2” dice (approximately 1 cup)
- 1 bay leaf
- 5 cups low-sodium vegetable (or chicken) broth, divided
- 1 can or pouch (15.5 ounces) organic Green Valley Great Northern Beans, drained and rinsed
- 1 tablespoon chopped fresh basil
- 1 1/2 cups cooked pasta such as elbow macaroni or ditalini
